Pineapple Shrimp Stir Fry Recipe

INGREDIENTS:

1 lb uncooked deveined shelled medium shrimp, thawed if frozen, tail shells removed
1 cup matchstick-cut carrots
1 medium red bell pepper, cut into 1-inch pieces
1 can (8 oz) pineapple chunks, drained
2/3 cup sweet-and-sour sauce
salt and pepper to taste

DIRECTIONS:

1:  Heat nonstick wok or 12-inch nonstick skillet over medium-high heat. Add shrimp and sprinkle with salt and pepper. Cook and stir 1 minute.

2:  Add carrots and bell pepper. Cook and stir 2 to 3 minutes or until shrimp turns pink and opaque, and vegetables are crisp-tender.

3:  Add pineapple chunks and sweet-and-sour sauce. Cook and stir 2 to 3 minutes longer or until pineapple is thoroughly heated. If desired, serve over hot cooked rice or noodles.

Darlene’s Tips:  Want them sweet and spicy?  Add some cayenne pepper to the mix! You can use chicken instead of shrimp.  Tossing in some marichino cherries with the pineapple would be super delish too!
