Quick Chicken Quesadillas Recipe – Use Up Your Leftovers

Quick Chicken Quesadillas Recipe

INGREDIENTS:
check for ingredient coupons here
6 oz to 10 oz leftover cooked chicken
1/2 cup salsa of your choice
8 flour tortillas for burritos (8 inch)
2 cups finely shredded cheese of your choice
Cooking spray

DIRECTIONS:

1:  Cut chicken into bite-size pieces or shred. Mix chicken with salsa in a small bowl.

2:  Spray 1 side of 1 tortilla with cooking spray then place sprayed side down on work surface. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla and spray top of tortilla with cooking spray.

3:  Cook in 10-inch nonstick skillet over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges.

Darlene’s Tips:  You can use more or less of the ingredients. You can also add whatever you like to the mix. Serve with sour cream and or guacamole and a side of Spanish Rice!
