Slow-Cooker Pumpkin Harvest Chex Mix Recipe

INGREDIENTS:

2 cups Cinnamon Chex cereal
2 cups Wheat Chex cereal
3 cups Vanilla Chex cereal
1 cup pecans
1 cup mini graham crackers
1 cup dried cranberries
1/2 cup pumpkin seeds (not in the shell)
1/2 cup butter, melted
1/4 cup packed brown sugar
1 tablespoon pumpkin pie spice

DIRECTIONS:

1:  Stir together the 3 cereals, pecans, graham crackers, dried cranberries and pumpkin seeds in a 5 to 6 quart slow cooker.

2:  In small bowl, mix together melted butter, brown sugar and pumpkin pie spice. Stir until well combined. Pour over cereal mixture and stir until evenly coated.

3:  Cook uncovered on High heat setting 2 hours, stirring every 15 to 20 minutes.

4:  Spread cereal mixture on ungreased cookie sheet or waxed paper. Cool 3 to 5 minutes before serving.

Darlene’s Tips: You can change this recipe any way you want.  If you don’t want to buy 3 different kinds of chex cereal, buy just one kind and use a total of 7 cups. If you can’t find cinnamon chex just use plain chex and add cinnamon to the mix. Instead of pumpkin pie spice you can use apple pie spice or just use a mix of cinnamon and nutmeg or you can skip the spice.  Once the snack mix is cooled you could toss in some butterscotch or chocolate (or both) morsels and something chewy like raisins. If you can’t find mini graham crackers at your local store, simply use broken full-size graham crackers.
