Slow-Cooker Pumpkin Harvest Chex Mix Recipe
INGREDIENTS:
2 cups Cinnamon Chex cereal
2 cups Wheat Chex cereal
3 cups Vanilla Chex cereal
1 cup pecans
1 cup mini graham crackers
1 cup dried cranberries
1/2 cup pumpkin seeds
1/2 cup butter, melted
1/4 cup packed brown sugar
1 tablespoon pumpkin pie spice
1 1/2 teaspoons vanilla
Darlene’s Tip: Don’t freak out if you don’t have the exact ingredients. Alter it to what you have on hand or what you like. And you don’t need brand name cereal. I just think it’s cool that you can do this in a crock pot!
DIRECTIONS:
Step 1: In oval 5- to 6-quart slow cooker, stir together the 3 cereals, pecans, graham crackers, dried cranberries and pumpkin seeds.
Step 2: In small bowl, mix together melted butter, brown sugar, pumpkin pie spice and vanilla. Stir until well combined. Pour over cereal mixture; stir until evenly coated.
Step 3: Cook uncovered on High heat setting 2 hours, stirring every 15 to 20 minutes.
Step 4: Spread cereal mixture on ungreased cookie sheet or waxed paper. Cool 3 to 5 minutes before serving.
