Easy Strawberry Ice Box Cake Recipe

NOTE:  Please remember that I don’t eat this stuff so I did not test this recipe. I’m just posting so you can try it!


1 package (3.2 oz) vanilla instant pudding
2 cups milk
2 cups whipped cream or whipped topping
2 cups strawberry yogurt
18 graham crackers
1/3 cup strawberry jam (seedless might be best)

Darlene’s Tips:  You can garnish with slices of fresh strawberries if you like. You can also play with different flavors by using blueberry yogurt and blueberry jam, pineapple yogurt and pineapple jam or ice cream topping, peach yogurt and peach preserves… so many options!


Step 1:  Pour the pudding mix into a large bowl. Add milk and stir for two minutes.

Step 2:  Add the yogurt and whipped topping and stir to combine.

Step 3:  Spread graham crackers with strawberry jam, and arrange in a single layer in your pan or baking dish.

Step 4:  Pour 2 cups of the strawberry filling over the crackers, and gently spread into an even layer.

Step 5:  Repeat process with layers of graham crackers, jam and filling. You should have three layers of each, with a layer of the strawberry filling on top.

Step 6:  Refrigerate for 8 hours, or overnight.

Step 7:  To serve, slice and garnish as desired.
