Please remember that I don’t eat this stuff so I did not make this recipe. I’m just posting so you can try it!
INGREDIENTS:
2 pounds potatoes
2 tablespoons taco seasoning mix
1/2 cup ranch dressing
1/2 cup shredded cheddar cheese
optional: scallions (green onions) for garnish
(see tips below)
DIRECTIONS:
1: Preheat oven to 350°F. Cube potatoes into 1/2 inch cubes.
2: Mix the ranch dression, taco seasoning and half of the cheddar cheese in a large bowl.
3: Add potatoes to the bowl and stir well to coat them with the sauce.
4: Add potatoes to a large baking dish (spray with non-stick cooking spray). Cover the dish with foil and bake for 45 minutes.
5: Remove foil and stir potatoes well. Return to the oven, uncovered, for another 20 minutes or until potatoes are crispy.
6: Remove potatoes and sprinkle with other half of cheddar cheese. The heat from the potatoes should melt the cheese. Garnish with chopped scallions if desired and serve.

Darlene’s Tips: You can add crispy bacon to this dish too. Just add it when you stir the potatoes for the final 20 minutes of baking. If you want crispier potatoes, you can bake longer.
