The crazy cake I’m baking – Apple Spice Carrot Cake with Total Cereal & Oatmeal

I’m in the process of whipping up a crazy cake.  I call it crazy because…

1. I don’t measure anything
2. I use what I have on hand to make it

I whip up all kinds of odd stuff and thought maybe you would like to know what I make so you can maybe get some new ideas!

NOTE: this is not even in the oven yet so I have no clue how it comes out.  I will say that I have never baked anything that we didn’t absolutely love!

I started with 1/2 a box of carrot cake mix. I must have used the other half in another recipe.  Since 1/2 a box is not enough, I’m adding to it!

I added…

about 1/2 a blender full of Total cereal ground up into flour
about 1 cup pancake mix (I have bisquick but I need to use up my pancake mix first)
about 1 cup oatmeal
2 apples that needed some love, chopped in small and big pieces (I got lazy)
2 Kozy Shack pudding cups that I froze and let thaw, one rice and one tapioca
2 eggs
2 carrots that I shredded with a potato peeler
generous amount of ground cinnamon
splash of liquid coffee creamer, vanilla spice flavor
enough Newman’s Own diet virgin lemonade to make it mixable

I will bake at 375 degrees for however long it takes. My guess is 45 minutes to an hour since it’s fairly thick.  I maybe should have added more liquid.

And this is what is looks like right now.  I will update when it’s done!  I will make a glaze using 1/2 a tub of vanilla frosting that I’ll thin with lemonade.

UPDATE:  I ended up taking it out of the oven at 42 minutes.  I mixed a bit of lemonade into my 1/2 tub of frosting to make a sort of glaze (it was creamy white frosting).  I poked holes in the cake with a fork so the glaze will soak through it.  I did this IMMEDIATELY after taking it out of the oven.  I love frosting a hot cake as it always comes out so moist.  As you can see, the glaze was quickly soaking in around the edges.  I will update again when I cut into it and will let you know how it tastes!

UPDATE:  This was a huge success!!! I wish you could taste it!  If you love carrot cake, you would love, love, LOVE this!!!  The small bits of apple made this super moist and the bigger chunks are like a special treat… almost like apple pie in a cake!  This is the second time I use Total cereal “flour” and I love the robust flavor it gives the recipe.  I would have loved a scoop of ice cream on this, but no ice cream in the freezer.

The only problem with my way of baking is that I can never make the same thing twice.  My mother always says “this one is the BEST and you have to make it again” but I can never duplicate it. And that’s okay because the next one is always the best!

Do NOT be afraid to experiment with food!  There are no rules when it comes to baking!  Play with it and you’ll be amazed at how good it comes out.  Ready, set… GO!
