Chocolate Covered Caramel Cracker Bars Recipe

Chocolate Covered Caramel Cracker Bars Recipe

INGREDIENTS:

90 buttery rectangular crackers (from 13.7-oz box, )
1 can (14 oz) sweetened condensed milk (not evaporated)
1 cup packed brown sugar
1/2 cup butter (not margarine)
1/4 cup whole milk
2 cups chocolate chips (milk, semi-sweet, dark, your choice)

DIRECTIONS:

1:  Line 13×9-inch pan with foil. Spray foil with cooking spray. Place 30 of the crackers in bottom of pan.

2:  In 2-quart saucepan, mix condensed milk, brown sugar, butter and milk. Cook over medium heat until butter is melted, stirring frequently. Increase heat to medium-high and heat to boiling. Boil 5 minutes, stirring constantly.

3:  Pour one-third of the caramel mixture over crackers in pan. Arrange 30 more crackers over caramel. Top with one-third of the remaining caramel mixture. Repeat with remaining crackers and caramel.

4:  In small microwavable bowl, microwave chocolate chips uncovered on High 1 to 2 minutes, stirring every 30 seconds, until melted and smooth. Pour over caramel and spread evenly. Refrigerate about 1 hour or until set. Cut into 6 rows by 8 rows. Store in the refrigerator.

Darlene’s Tips: If you can’t find the rectangle buttery crackers, you can use saltine crackers or graham crackers.  You could even use rectangle or square cookies.  Instead of chocolate morsels, you could use any flavor that you want. would be delish!  Add some chopped nut to this recipe if you like. You can sprinkle the nuts on top of the candy morsel topping or you could sprinkle finely chopped nuts on every layer.  You can freeze these and eat straight from the freezer if you want. They should soften up quickly.

Easy Fluffernutter Bars Recipe – Just 3 Store-Bought Ingredients

INGREDIENTS:

1 roll (16.5 oz) Pillsbury refrigerated peanut butter cookies
25 Reese’s Minis peanut butter cups (from 8-oz package)
1/2 cup marshmallow creme

DIRECTIONS:

1: Heat oven to 350°F.

2: In medium bowl, mix cookie dough and peanut butter cups until well blended. Reserve 1 cup cookie dough. Press remaining dough evenly in bottom of ungreased 8-inch square pan. Bake 15 minutes.

3: Drop tablespoonfuls marshmallow cream on bar base. Crumble reserved cookie dough onto marshmallow and bar base.

4: Bake 14 to 18 minutes or until golden brown. Cool completely, about 1 hour. Cut into bars.

Darlene’s Tips: If you don’t have marshmallow creme in your area, use mini marshmallows or cut some big marshmallows and add those to the bars. Delish!

1 container (6 oz.) yogurt, flavor of your choice
3 cups powdered sugar
1/2 stick butter, softened to room temp (see my tips below)

DIRECTIONS:

1:  Cream together softened butter and yogurt in a mixing bowl, using an electric hand mixture at medium speed, until fully combined and smooth.

2:  Add 1/2 cup powdered sugar and keep mixing until smooth. Continue adding remaining powdered sugar 1/2 cup at a time. Frosting will have the consistency of a thick glaze. Use immediately, or refrigerate covered up to two days until ready to use. Stir well before using.

Darlene’s Tips: To quickly soften butter, cut it into small pieces and place the pieces on a plate spaced out. You can also use a potato peeler and shave the butter. The shavings will be soft in no time!  This frosting will be a bit on the tart side so perfect for those who don’t like extra sweet frosting on their cakes. However, it should still be plenty sweet for those with a sweet tooth.  Use on cakes, cupcakes, muffins, sweet breads, browies, cookies, french toast, pancakes, crepes, whatever!
