Very Berry Dump Cake Recipe

INGREDIENTS:

1 box Betty Crocker Super Moist yellow cake mix
6 cups fresh berries of your choice (blueberries, raspberries, strawberries, mixed)
1/2 cup sugar
3/4 cup butter, melted

DIRECTIONS:
1: Heat oven to 350°F. Spray 13×9-inch pan with cooking spray.
2: Spread berries evenly in bottom of pan. Sprinkle sugar over berries.
3: Dump dry cake mix over berries and gently shake pan to distribute evenly.
4: Pour melted butter over top of cake mix, tilting pan to cover as much of the top with butter as possible.
5: Bake 45 to 50 minutes or until top is light golden brown, mostly dry on top and bubbly around edges. Cool 15 minutes before serving.
Darlene’s Tips: You could also use cut up pieces of fresh fruit like peaches, apples, pears, etc. Frozen fruits or berries might work too. You can use any cake mix flavor that you want. Lemon or strawberry would be delish! Serve warm with a side of ice cream or a dollop of whipped topping or pudding… or all of those things!

Easy Baked Mozzarella Bites Recipe

INGREDIENTS:

1 can (8 oz) Pillsbury refrigerated crescent dough sheet
8 mozzarella sticks (from 12-oz package), unwrapped and cut crosswise into thirds
3 tablespoons butter, melted
2/3 cup Italian style panko crispy bread crumbs

DIRECTIONS:
1: Heat oven to 375°F. Unroll dough sheet and press into rectangle, 12×8 inches. Using pizza cutter, cut rectangle into 6 rows by 4 rows to make 24 (2-inch) squares.
2: Place mozzarella stick in center of each rectangle. Bring dough up and around cheese sticks and press edges to seal.
3: Place melted butter in small bowl. Place bread crumbs in another small bowl. Dip each stick into butter and shake off excess. Roll in bread crumbs to coat. Place about 1 inch apart on ungreased large cookie sheet.
4: Bake 11 to 13 minutes or until golden brown. Serve warm.
Darlene’s Tips: Serve with warm marinara sauce or ranch dressing. Or both! Want it spicy? You could also add a slice or two of jalapeno pepper, one under the cheese and one on top of the cheese, then roll the dough over the whole thing. You could also add a sprinkle of cayenne pepper to the bread crumbs.

Whipped Topping Cookies Recipe

INGREDIENTS:

1 box Betty Crocker Super Moist cake mix (any flavor)
1 container (8 oz) frozen whipped topping, thawed
1 egg
1/2 cup powdered sugar
See my Darlene’s Concoctions videos!
DIRECTIONS:
1: Heat oven to 350°F. Spray cookie sheet with cooking spray.
2: In medium bowl, stir together cake mix, whipped topping and egg until combined. (Dough will be thick and sticky.)
3: Place powdered sugar in small bowl. Using wet hands, shape tablespoonfuls of dough into balls and roll in powdered sugar. Place balls 2 inches apart on cookie sheet.
4: Bake 10 to 12 minutes or until edges are set. Cool 2 minutes then remove from cookie sheet to cooling rack.
Darlene’s Tips: Top with a dollop of whipped topping before serving or dip into whipped topping while eating as a special treat!

Easy Peanut Butter Fudge Cereal Bars Recipe

INGREDIENTS:

1 bag (10 oz) peanut butter baking chips
2/3 cup peanut butter, smooth or chunky
2 cups cereal of your choice

DIRECTIONS:
1: Microwave baking chips and peanut butter together in a microwave safe bowl in 30-second bursts, stirring between each, until melted.
2: Stir in cereal.
3: Spread into a parchment-lined 9 x 5-inch loaf pan and press into an even layer. Refrigerate until set and cut into squares or bars with a sharp knife.
Darlene’s Tips: You can use any flavor of baking chips that you like. Chocolate morsels with the peanut butter would be great! You can also add other ingredients like mini marshmallows, chopped nuts, dried fruit, whatever! Experiment with different types of cereal.
