Butter Pecan Sugar Cookies – Easy Cookie Dough Hack

INGREDIENTS:
1 roll (16.5 oz) Pillsbury refrigerated sugar cookies
2 tablespoons melted butter, cooled (not margarine)
1/2 cup finely chopped pecans
1/4 cup all-purpose flour
2 tablespoons firmly packed brown sugar

DIRECTIONS:

1:  Heat oven to 350°F.  Break up cookie dough in large bowl.

2:  Add the cooled melted butter, pecans, flour and brown sugar to the cookie dough and stir with a spoon or knead with hands until well mixed.

3:  Shape dough into 1 inch balls. Place 2 inches apart on large ungreased cookie sheets.

4:  Bake 11 to 14 minutes or until edges are golden brown. Cool 2 minutes then remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.

Darlene’s Tips:  To make the optional glaze, start with about 1/3 cup of powdered sugar and add a teaspoon at a time of cooled melted butter and stir. Add more butter as necessary until you get a consistency you like. Too thin?  Add more powdered sugar. You can also make a simple glaze using powdered sugar and milk or water. Just remember to add a tiny bit of liquid at a time. You can try this recipe with other flavor cookie doughs and different nuts. You can add candy morsels too!

Slow Cooker Italian Meatloaf Recipe – Just 5 Ingredients

INGREDIENTS:
1½ lb lean ground beef (at least 80%)
3/4 cup Italian style bread crumbs
1 cup grated Parmesan cheese (fresh or grated)
2 eggs
1 cup marinara sauce or any pasta sauce

DIRECTIONS:

1:  Line bottom and side of slow cooker with large sheet of foil. Lightly spray with cooking spray.

2:  In large bowl, stir together the ground beef, bread crumbs, Parmesan cheese and 2 eggs. Shape mixture into a loaf then place in slow cooker.

3:  Cover and cook on Low heat setting 5 to 6 hours.

4:  Uncover and pour the marinara or pasta sauce evenly over cooked meatloaf. Cover and cook on Low heat setting 15 minutes longer or until sauce is thoroughly heated.

5:  Use sides of foil to remove meatloaf from slow cooker to cutting board. Let stand 10 minutes before slicing and serving.

Darlene’s Tips:  You can heat the marinara or pasta sauce in a saucepan on the stove if you want. Then you don’t have to pour it over the top.  You can let everyone pour as much as they want on their individual servings.  Add other ingredients to the meatloaf as desired like garlic, chopped peppers or pimentos, chopped black olives, additional seasonings, whatever!

Cookies and Cream Cake Recipe – Easy Cake Mix Hack

INGREDIENTS:
1 box (18.25-ish oz) white cake mix
1 1/4 cups water
1/4 cup vegetable oil
2 eggs
1 cup coarsely crushed creme-filled chocolate sandwich cookies

DIRECTIONS:

1:  Heat oven to 350°F. Grease and flour 13×9-inch pan.

2:  In large bowl, beat cake mix, water, oil and egg whites at low speed until moistened. Beat 2 minutes at medium speed. Stir in crushed cookies. Pour batter into pan.

3:  Bake 30 to 40 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Frost as desired.

Darlene’s Tips:  You can totally mix some crushed cookies into the frosting and also add some on top. You could add some chocolate and white morsels to the mix too, up to 1/2 total.

Lemon Pie Cake Recipe – Easy Cake Mix Hack

INGREDIENTS:
1 box lemon cake mix
plus ingredients on box needed for the cake
1 can lemon pie filling
Frosting of your choice

DIRECTIONS:

1: Heat oven to 350°F. Grease and flour 13×9-inch pan or spray with nonstick cooking spray. Prepare cake mix as directed on package. Spread batter in pan.

2:  Drop pie filling by heaping teaspoonfuls evenly onto batter.  Do not swirl it in. Just leave the heaps on top. They will sink in while baking and create pockets of lemon.

3:  Bake at 350°F. for 30 to 40 minutes or until edges pull away from pan and top is golden brown. Cool cake in pan for 45 minutes or until completely cooled.  Frost as desired. Store leftovers in the refrigerator.

Darlene’s Tips:  Instead of frosting, you could serve with whipped topping. Try this with other flavor cakes and other pie fillings like apple or cherry. This is a nice dessert to bring to a summer potluck!

Easy Meatball Sub Bubble-Up Bake Recipe

INGREDIENTS:
1 can (16.3 oz) Pillsbury Grands! Homestyle refrigerated biscuits

1 bag (16 oz) frozen cooked Italian meatballs (this bag makes 2 batches)
1 green bell pepper, diced, sautéed
3 cups marinara sauce
2 cups shredded Italian cheese blend (8 oz)
Grated Parmesan cheese, if desired

DIRECTIONS:

Step 1:  Heat oven to 350°F.

Step 2:  Separate dough into 8 biscuits. Cut each biscuit into 6 pieces; place in large bowl. Add meatballs, sautéed bell pepper and marinara sauce; stir until well coated.

Step 3:  Pour into ungreased 13×9-inch (3-quart) glass baking dish. Sprinkle Italian cheese blend evenly over top.

Step 4:  Bake 35 minutes or until biscuit pieces are puffed and cheese is melted and golden brown.

Step 5:  Before serving, sprinkle with Parmesan cheese if desired.

Darlene’s Tips: You can use any style biscuit you like. You can also use any flavor of meatball. You could also swap out for chicken nuggets.  Instead of marinara sauce you can use any pasta sauce including alfredo sauce. Scoop into a sub roll for a fantastic sandwich.  Hot dog buns are a great sandwich option for smaller appetites.

Slow Cooker Honey Mustard Chicken – Easy 5-Ingredient Recipe

INGREDIENTS:
6 bone-in chicken thighs, about 1½ lbs
1/2 cup packed light brown sugar
1/2 cup honey
1/4 cup Dijon mustard (see tips below)
1/4 cup apple juice

DIRECTIONS:

1:  Spray 3½ to 4 quart slow cooker with cooking spray. Remove skin and any fat from chicken and place in cooker.

2:  Mix brown sugar, honey, mustard and apple juice in a small bowl. Pour over chicken.

3:  Cover and cook on Low heat setting 4 to 5 hours or until juice of chicken is clear when thickest part is cut to bone.

Darlene’s Tips:  If you don’t have dijon mustard, you can substitute with any mustard you have on hand, even plain yellow mustard or spicy brown mustard.  If you want a bit of hot and spicy bite, use horseradish mustard. You can use boneless chicken thighs but reduce the cooking time by about 30 minutes. This might also make a good recipe for chicken wings. Make some extra sauce for dipping.

Caramel Apple Poke Cake Recipe

INGREDIENTS:
1 box white cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1 can (20 oz) apple pie filling
1/3 cup caramel sauce
1 container (8 oz) frozen whipped topping, thawed
optional: butterscotch morsels

DIRECTIONS:

1:  Heat oven to 350° F. Grease or lightly spray bottom only of 13 x 9-inch pan.

2:  In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 2 minutes. Add apple pie filling and beat 1 minute longer.

3:  Pour batter into pan and bake as directed on box for 13 x 9-inch pan. Cool in pan on cooling rack 20 minutes.

4:  Poke warm cake every inch with a straw or handle of wooden spoon, halfway into cake. Pour caramel over cake, allowing it to fill in holes.

5:  Spread cake with whipped topping. You can drizzle more caramel sauce on top and add morsels or sprinkes of your choice.

Darlene’s Tips:  If you don’t have an electric mixer, you can beat by hand. Then maybe cut your apple pie filling (if it’s all large pieces) into smaller pieces and add to the batter and mix well. You don’t have to use a white cake mix. Use any cake mix and bake it as directed on the box using the ingredients stated on the box. A spice cake with apple pie filling and caramel might be delish!

Pecan Tea Cakes Recipe – Easy 4-Ingredient Sugar Cookie Dough Hack

INGREDIENTS:
1 roll (16.5 oz) Pillsbury refrigerated sugar cookie dough
1/4 cup all-purpose flour
3/4 cup finely chopped pecans
Powdered sugar
(see tips below)

DIRECTIONS:

1:  Heat oven to 350°F. Break up cookie dough in large bowl. Stir or knead in flour and pecans until well blended.

2:  Shape dough into 1-inch balls (should get about 54). Place 1 inch apart on ungreased cookie sheets.

3:  Bake 10 to 14 minutes or until set but not brown. Remove from cookie sheets. Cool 1 minute on cooling rack.

4:  Roll warm cookies in powdered sugar and place on cooling rack. After fully cooled, roll in powdered sugar again.

Darlene’s Tips:  You can use any chopped nuts you like, even chopped mixed nuts. Feel free to add a teaspoon of your favorite flavor extract. Vanilla is alway a good choice, but rum, peppermint or almond would also be good choices. Feel like experimenting?  Try adding a bit of baking cocoa to the powdered sugar for a hint of chocolate flavor. It would also cut down on the sweetness a bit since the cocoa is not sweet.  I have not tried this, but I bet it would work.

Blueberry Muffin Mix Pancakes – Easy 4-Ingredient Recipe

INGREDIENTS:
1 package Betty Crocker wild blueberry muffin mix
1 3/4 cups water
1/4 cup vegetable oil
2 eggs

DIRECTIONS:

1:  Drain blueberries. Rinse blueberries and set aside.

2:  Stir muffin mix, water, oil and eggs in medium bowl just until blended. Gently stir blueberries into batter.

3:  Pour about 1/4 cup batter onto hot griddle for each pancake (spray griddle if necessary). Cook about 1 1/2 minutes or until golden. Turn and cook 1 minute until golden.

Darlene’s Tips:  If you want thicker pancakes, decrease the water to 1½ cups.  If you want richer pancakes, use whole milk instead of water.  Make and freeze pancakes and heat in your toaster. Keep them separated by freezing in individual baggies then storing all the baggies in one larger bag or container.

Cherry Cobbler Muffins – Easy Muffin Mix Hack Recipe

INGREDIENTS:
1 box Betty Crocker Cinnamon Streusel Muffin and Quick Bread Mix
2/3 cups milk
1/4 cup butter, melted
2 eggs
1 can (21 ounce) cherry pie filling

DIRECTIONS:

1:  Preheat oven to 425°F. In a large bowl, whisk together the muffin mix (setting the streusel packet aside for later), milk, melted butter and eggs until smooth.

2:  Spoon batter into 12 muffin tins lined with cupcake wrappers, about half to 2/3 full.

3:  Scoop 2 tablespoons of cherry pie filling on top of the batter. For best results, scrape some of the sauce off the cherries.

4:  Sprinkle streusel topping over each cupcake.

5:  Bake in preheated oven for 15-20 minutes, or just until the edges of the cupcakes are golden brown and the centers are set. Cool before removing from muffin tins and serving.

Darlene’s Tips:  You can use any muffin mix that you want and skip the streusel topping. You can also use various pie filling like apple, blueberry (would be awesome on top of blueberry muffins) or try some pieces of canned fruit like peaches or pineapple.  My Dollar Tree has cans of cherry pie filling for just a buck. Check your dollar store!
