One Pot Mac & Cheese – Easy 3-Ingredient Recipe

INGREDIENTS:
1 lb uncooked elbow macaroni
2 cups (8 oz) shredded sharp Cheddar cheese (see tips below)
1 can (12 oz) evaorated milk (NOT sweetened condensed)

What do I have on ebay?

DIRECTIONS:

1: Heat evaporated milk and 4 cups hot water to boiling in a 5-quart pot.

2:  Add macaroni to pot and bring back to a boil.

3: Reduce heat to simmer and cook uncovered for about 8 to 10 minutes, stirring frequently. Do not drain.

4: Remove from heat and stir in cheese until melted.

Darlene’s Tips:  If you don’t want to use sharp cheddar, you can use 8 oz of American or any cheese that is good for melting (try a fiesta blend!).  If you have too much liquid, drain some before adding the cheese.  If you don’t have enough liquid, you can add some water or some milk.  You can also use other pasta shapes like rotini, shells, farfalle or bow ties.  Toss in crumbled bacon, cut up cooked chicken, frozen or canned veggies… whatever you like!

Quick & Easy Praline Bars – Simple 4-Ingredient Recipe

INGREDIENTS:
24 graham cracker squares
1/2 cup packed brown sugar
1/2 cup butter
1/2 cup chopped pecans (or nuts of your choice)

DIRECTIONS:

1: Heat oven to 350ºF.  Arrange graham crackers in single layer in ungreased jelly roll pan, 15 1/2×10 1/2×1 inch.

2: Heat brown sugar and butter to boiling in 2-quart saucepan. Boil 1 minute, stirring constantly, then remove from heat.

3: Pour sugar mixture over crackers and spread evenly. Sprinkle with nuts if desired.

4: Bake 8 to 10 minutes or until bubbly. Cool slightly. Cut between graham crackers into bars.

Darlene’s Tips:  Try this over chocolate grahams or cinnamon grahams for a flavorful twist. And you could toss some chocolate morsels or butterscotch morsels on the grahams after removing from the oven and let them melt a bit. Maybe sprinkle with coconut flakes too. Can also be done with saltine crackers. Experiment!

Bisquick Crumb Cake Recipe

INGREDIENTS:

CAKE
1 1/2 cups Original Bisquick mix
1/2 cup granulated sugar
1/2 cup milk or water
2 tablespoons butter or margarine, softened
1 egg

TOPPING
1/2 cup flaked coconut
1/3 cup packed brown sugar
1/4 cup chopped nuts
3 tablespoons butter or margarine, softened
2 tablespoons milk

What do I have on ebay?

DIRECTIONS:

1:  Heat oven to 350°F. Grease and flour 9-inch round cake pan or 8-inch square pan.

2:  Beat all cake ingredients in large bowl with electric mixer on medium speed for about 4 minutes, scraping bowl occasionally. Pour into pan.

3:  Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.  Cool slightly.

4:  Mix topping ingredients in small bowl and spread over cake. Set oven control to broil. Broil about 3 inches from heat for about 3 minutes or until golden brown.

Darlene’s Tips:  You can add baking morsels to the topping. Butterscotch morsels would be awesome.  You can pop cold pieces of cake into the microwave for about 15 seconds to serve warm.

Easy Cookie Icing Recipe

INGREDIENTS:
1 cup powdered sugar
2-3 tablespoons milk
optional: 1 teaspoon extract (vanilla, almond, any)
optional: food coloring and sprinkles

What do I have on ebay?

DIRECTIONS:

1: Mix powdered sugar and a few  drops of milk in a small bowl (if using extract and food coloring, add that too) and mix until smooth.

2:  Keep adding a few drops of milk until you get the desired consistency. You want the icing to pool a bit, like glaze. If it’s too thick, just add a few more drops of milk. Too watery? Add more powdered sugar.

3: Spread on cookies (add any sprinkles you might want to use immediately). Let stand until icing is set, about 15 minutes.

Darlene’s Tips:  This icing is also great for muffins, brownies, cupcakes or cakes too. You can even use on pancakes, waffles or french toast (make it thinner if you want). You can make chocolate icing by adding a bit of baking cocoa.

Slow Cooker Root Beer Chicken Wings – Just 3 Ingredients

INGREDIENTS:
2 lb fresh chicken wings
1 cup root beer
1½ cups barbecue sauce of your choice

What do I have on ebay?

DIRECTIONS:

1: Spray 4-quart slow cooker with cooking spray. Place chicken in slow cooker.

2: Stir root beer and barbecue sauce in a bowl until well blended. Reserve 1 cup sauce. Pour remaining sauce over chicken. Stir to coat.

3: Cover and cook on Low heat setting 3 to 4 hours. Serve with remaining sauce for dipping.

Darlene’s Tips:  If using frozen wings, let them thaw first. If you want a bit of a crispier version, place the cooked wings under the broiler for a bit before serving. Don’t like root beer?  Use cola. You could try this recipe with chicken drumsticks instead of wing pieces. Don’t want chicken?  Use frozen cooked meatballs and cut the cooking time.

Crunchy Fluff Snack Mix – Just 3 Ingredients

INGREDIENTS:
6 cups popped butter-flavor microwave popcorn
4 cups Wheat, Corn or Rice Chex cereal
1 container (7 ounces) marshmallow creme

What do I have on ebay?

DIRECTIONS:

1: Heat oven to 350°. Spray cookie sheet with cooking spray. Mix popcorn and cereal in large bowl and set aside.

2: Microwave marshmallow creme in medium microwavable bowl uncovered on High 1 minute then stir. Microwave about 1 minute longer or until melted then stir again.

3:  Pour marshmallow over popcorn mixture, stirring until evenly coated. Spread mixture on cookie sheet.

4: Bake 5 minutes then stir. Bake about 5 minutes longer or until coating is light golden brown. Spread on waxed paper or aluminum foil to cool. Store in covered container up to 2 weeks.

Darlene’s Tips:  You can add nuts, pretzels, chocolate morsels, anything you want! Just use more marshmallow creme to coat it all. If you can’t find the 7 oz container of marshmallow creme, just use about half of the 16 oz container of marshmallow fluff.  This will also give you extra if you add more ingredients.

Bisquick Mug Pancake – Easy 2-Ingredient Recipe

INGREDIENTS:

1/4 cup Original Bisquick
1/4 cup milk

What do I have on ebay?

DIRECTIONS:

1: Combine Original Bisquick and milk in a microwavable mug.

2:  Cook in microwave on high for 1 minute (you may need to adjust time according to your microwave).

Darlene’s Tips:  Top with whatever you like, syrup, whipped topping, jelly, fruits, berries, raisins, etc.  You could also add some berries to the mix. Experiment with your microwave to get the right amount of time you need for the pancake to come out cooked and fluffy. Different size mugs will change the time too. Once you get it right, use the same mug each time. Also cook only 1 mug pancake at a time or play with multiple mugs and alter the time accordingly.

Cake Batter Pancakes Recipe – Make Any Flavor

INGREDIENTS:

1 cup cake mix, flavor of your choice
1 cup milk
2 eggs
optional: glaze (see my tips below)
optional: candy sprinkles

What do I have on ebay?

DIRECTIONS:

1:  Stir together pancake ingredients until blended (if using sprinkles, add some to the mix).

2:  Pour about 1/4 cupfuls onto hot griddle. Cook until edges are dry.

3:  Turn and cook until pancakes are golden brown. Stack on serving plates.

Darlene’s Tips:  Make a simple glaze by mixing 1 cup of powdered sugar with just a few drops of water or milk. Stir. Add a bit more liquid, a few drops at a time, until you get your desired consistency. Add more sprinkles when serving if you want. Can also be topped with whipped topping.

Chicken Enchiladas Recipe – Easy Canned Soup Hack

INGREDIENTS:
1 can (18.5 oz) Progresso Chicken and Cheese Enchilada Soup
1 can (10 oz) mild, medium or hot enchilada sauce
2 cups shredded cooked chicken
2 cups shredded Monterey Jack cheese (8 oz)
10 corn tortillas (6 inches)

DIRECTIONS:

1: Heat oven to 350°F. In medium bowl, stir together soup and enchilada sauce. Spread 1 cup soup mixture in ungreased 11 × 7 baking dish.

2: In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese. Reserve remaining soup mixture.

3:  On microwavable plate, stack tortillas and cover with paper towel. Heat on High 1 minute to soften. Place 1/4 cup chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish with sauce.

4: Pour remaining soup mixture over enchiladas. Sprinkle with remaining 1 cup cheese. Bake about 30 minutes or until cheese is melted and sauce is bubbly around edges.

Darlene’s Tips:  Serve with your favorite Mexican rice. You can also include toppings like pico de gallo, salsa, guacamole, avocados, sour cream, or whatever you like, along with a bowl of tortilla chips for crunch.

Whipped Topping Cookies – Any Flavor – Easy 4-Ingredient Cake Mix Hack

INGREDIENTS:
1 box Betty Crocker Super Moist cake mix (any flavor)
1 container (8 oz) frozen whipped topping, thawed
1 egg
1/2 cup powdered sugar

What do I have on ebay?

DIRECTIONS:

1: Heat oven to 350°F. Spray cookie sheet with cooking spray.

2: In medium bowl, stir together cake mix, whipped topping and egg until combined. (Dough will be thick and sticky.)

3: Place powdered sugar in small bowl. Using wet hands, shape tablespoonfuls of dough into balls and roll in powdered sugar. Place balls 2 inches apart on cookie sheet.

4: Bake 10 to 12 minutes or until edges are set. Cool 2 minutes then remove from cookie sheet to cooling rack.

Darlene’s Tips:  Top with a dollop of whipped topping before serving or serve with whipped topping as a dip. You can flavor whipped topping with a few drops of extract of your choice.
