I never know when I’ll recover. I just know I will.

Shredded Mexican Chicken – Easy 3-Ingredient Slow Cooker Recipe

Please remember that I don’t eat this stuff so I did not make this recipe. I’m just posting so you can try it!

INGREDIENTS:
1½ lbs
1 package (1 oz)
3 cups of your choice

DIRECTIONS:

1:  In 4 to 5 quart , toss chicken with about half of the taco seasoning mix to coat evenly.

2:  Top chicken with salsa. Stir until well combined.

3:  Cover and cook on Low heat setting 4 to 4 1/2 hours or until chicken is very tender (at least 165°F).

4:  Remove chicken from slow cooker to a bowl or . Shred chicken with 2 forks or .

5:  Return shredded chicken to slow cooker along with remaining taco seasoning mix. Cover and cook on Low heat setting 30 minutes longer. Serve warm.

Darlene’s Tips:  You can use this as a filling and top with your favorite taco indgredients.  Also good with a side of .  Use for burritos too!

Lemon Pound Cake Recipe – Easy 4-Ingredient Cake Mix Hack

Please remember that I don’t eat this stuff so I did not make this recipe. I’m just posting so you can try it!

INGREDIENTS:
1 box Betty Crocker Super Moist
3 oz , softened (about 1/3 of 8 oz bar)
1 cup
3

DIRECTIONS:

1:  Heat oven to 325°F. Generously spray bottom only of 9×5-inch with baking spray with flour.

2:  In medium bowl, beat cake mix, cream cheese, milk and eggs with on low speed 1 minute, scraping bowl frequently, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.

3:  Bake 50 to 60 minutes or until inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan to . Cool completely, about 1 hour.

Darlene’s Tips:  Frost with lemon frosting if you want.  You can heat the frosting a bit then drizzle it over the cake.  You could also add some lemon zest on top or even in the mix.  You can use yellow cake and add a bit of lemon extract.
