Meatball & Pepperoni Pasta Bake Recipe

INGREDIENTS:

1 box (16 oz) penne pasta
2 jars (24 oz each) marinara or pasta sauce
1 cup sliced pepperoni
1 bag (16 oz) frozen cooked Italian-style meatballs (32 meatballs)
2 cups water
1 package (8 oz) shredded Italian cheese blend (2 cups)

DIRECTIONS:
1: Heat oven to 350°F. Spray 13 x 9-inch (3-quart) baking dish with cooking spray.
2: Mix all ingredients except cheese in the baking dish. Cover with foil.
3: Bake 55 to 60 minutes or until pasta is tender. Uncover and sprinkle with cheese. Bake uncovered 8 to 10 minutes or until cheese is melted.
Darlene’s Tips: You can use whatever pasta you like. Try spaghetti for spaghetti and meatballs! You can skip the pepperoni if you want and add a few extra meatballs. You could also add other ingredients like mushrooms, chopped onion, cooked sausage, black olives, whatever! Sounds like this recipe makes a big batch, so you might want to cut it in half just to try it.

No Bake Butterscotch Bombs Recipe

INGREDIENTS:

4 cups chex cereal (any variety)
1/2 cup peanuts
2 cups miniature marshmallows
1 bag (11 oz) butterscotch chips
1/2 cup peanut butter (creamy or chunky)

DIRECTIONS:
1: Mix cereal, peanuts and marshmallows in a large bowl.
2: In medium microwavable bowl, microwave butterscotch chips and peanut butter uncovered in for one minute then in 15 second increments, stirring after each, until mixture is smooth and melted.
3: Pour over cereal mixture and mix until cereal mixture is thoroughly coated.
4: Drop by spoonfuls onto wax paper. Let stand 15 to 20 minutes to set.
Darlene’s Tips: There are so many ways you can switch up this recipe! Use any variety of cereal that you like. Use any flavor morsels. Add any kind of nuts or skip the nuts. Add any ingredients that you want, like M&Ms, raisins, coconut, chopped up candy bars, whatever!

Peanut Butter Brownies Recipe

INGREDIENTS:

Brownies
1 box (16 oz) Betty Crocker Supreme original brownie mix
Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
1/4 cup packed brown sugar
1/4 cup peanut butter (creamy or chunky)
1 egg
Peanut Butter Frosting
3/4 cup Betty Crocker Rich & Creamy vanilla frosting (from 16-oz container)
1/4 cup peanut butter (creamy or chunky)
1 to 2 teaspoons milk

DIRECTIONS:
1: Heat oven to 325°F. Grease bottom of 9-inch square pan with shortening or cooking spray. Make brownie batter as directed on box for cakelike brownies. In small bowl, reserve 1/2 cup of the brownie batter and set aside. Spread remaining batter in pan.
2: In small bowl, mix brown sugar, 1/4 cup peanut butter and 1 egg. Spoon peanut butter mixture by tablespoonfuls evenly onto brownie batter. Top with random tablespoonfuls of reserved brownie batter. Cut through batter several times with knife for marbled design.
3: Bake 35 to 38 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely on cooling rack, about 1 1/2 hours.
4: In small bowl, mix Peanut Butter Frosting ingredients, until smooth and spreadable. Spread frosting over brownies. Cut into 5 rows by 4 rows. Store tightly covered.
Darlene’s Tips: Want a quick treat that looks homemade? Pick up some store-bought brownies (like Little Debbie) and top them with the peanut butter frosting. That frosting would be delish on chocolate cake too! You could also sprinkle some peanut butter and chocolate morsels on top of the frosting. For extra peanut buttery frosting, try using equal parts of peanut butter and frosting. Add a few more drops of milk if necessary to get the consistency you want. You can also make the frosting very light to use as a glaze. Just keep adding milk a few drops at a time. Too thin? Add some powdered sugar. Ohhhhh… you can add peanut butter to chocolate frosting too! Yummers!

Apple Pie & Cheddar Bars Recipe

INGREDIENTS:

1 roll (16.5 oz) Pillsbury refrigerated sugar cookie dough
1 1/2 cups finely shredded sharp Cheddar cheese (6 oz) SAVE $
2 large apples
1/4 cup plus 2 tablespoons all-purpose flour
3 tablespoons sugar

DIRECTIONS:
1: Heat oven to 350° F. Line 8-inch square (2-quart) baking dish with cooking parchment paper, leaving paper overhanging on two sides.
2: Using pastry blender (or your hands), mix 1 roll (16.5 oz) Pillsbury sugar cookie dough with 1 1/2 cups finely shredded sharp Cheddar cheese (6 oz) until evenly incorporated. Press about two-thirds of mixture evenly in baking dish. Bake 12 minutes then remove from oven.
3: Meanwhile, peel and thinly slice 2 large apples. Toss apples with 2 tablespoons all-purpose flour and 2 tablespoons granulated sugar in medium bowl. Spread apple mixture evenly over crust in baking dish.
4: Add 1/4 cup all-purpose flour and 1 tablespoon sugar to remaining cookie dough mixture and combine until evenly incorporated. Sprinkle crumbled chunks of cookie dough mixture on top of the apple layer.
Bake about 40 minutes or until top is light golden brown. Cool 2 hours then cut into bars or squares.
Darlene’s Tips: You could add some chopped nuts to the top layer of cookie dough. You could also add some spices to the apple mix like cinnamon or apple pie spice. You can also serve warm with a side of ice cream.

Bisquick Banana Bread Recipe

INGREDIENTS:

1 1/3 cups mashed very ripe bananas (2 large)
2/3 cup sugar
1/4 cup milk
3 tablespoons vegetable oil
3 eggs
2 2/3 cups Original Bisquick mix
Optional: 1/2 cup chopped nuts

DIRECTIONS:
1: Heat oven to 350°F. Grease bottom of 9x5x3-inch loaf pan.
2: Stir bananas, sugar, milk, oil and eggs in large bowl. Stir in Bisquick mix (and nuts if desired). Pour into pan.
3: Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan and remove from pan and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.
Darlene’s Tips: You can freeze this bread, either the whole loaf, or individually wrapped slices, and grab when needed. Add banana extract for extra banana flavor especially if your bananas are not ripe enough (very ripe bananas give more flavor).
