Easy Sheet Pan Fried Chicken Recipe

Easy Sheet Pan Fried Chicken Recipe

INGREDIENTS:

4 pieces bone-in, skin-on chicken (thighs or drums or both)
1/4 cup bread crumbs
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon paprika
2 tablespoons butter (not margarine)

DIRECTIONS:

1:  Heat oven to 400°F.  Line a sheet pan with foil (you can use a cookie sheet).  Spray foil with cooking spray.

2:  In small bowl, mix bread crumbs, salt, pepper and paprika. Coat chicken pieces with bread crumb mixture. Place chicken, skin sides down, in foil half of pan.

3:  In small microwavable bowl, microwave 2 tablespoons butter uncovered on High 10 to 15 seconds or until melted. Drizzle melted butter over chicken pieces.

4:  Bake 20 to 23 minutes or until chicken starts to brown. Turn chicken over and bake 17 to 20 minutes more.

Darlene’s Tips: Don’t worry about measuring the salt, pepper and paprika.  Just add as little or as much as you want.  You can also add other seasonings like garlic power, onion powder, cayenne pepper, taco seasoning, whatever! You can also use seasoned bread crumbs then you don’t need any seasoning at all.

Tex-Mex Ranch Potatoes Recipe

INGREDIENTS:

2 pounds red potatoes
2 tablespoons Old El Paso taco seasoning mix
1/2 cup ranch dressing
1/2 cup cheddar cheese
Optional: crumbled bacon and chopped green onion for garnish

DIRECTIONS:

1:  Preheat oven to 350°F.  Cube potatoes into 1/2 inch cubes.

2:  In a large bowl, stir together ranch, taco seasoning, and half of the cheddar cheese.

3:  Add in potatoes and stir well to coat them with the sauce.

4:  Add potatoes to a large baking dish. Cover the dish with foil and bake them at 350°F for 45 minutes.

5:  Remove foil and stir potatoes well. Return to the oven uncovered for another 20 minutes or until potatoes are crispy.

6:  Remove potatoes and sprinkle with other half of cheddar cheese.  Garnish with crumbled bacon and chopped green onions if desired.

Darlene’s Tips: Want them spicy?  Add a bit of cayenne pepper to the mix. You could also add chopped jalapeno peppers as garnish.  You can totally use white potatoes if you want, does not have to be red. You could also try different dressing flavors. Experiment!

Easy Apple Monkey Bread Recipe – Canned Cinnamon Roll Hack

Easy Apple Monkey Bread Recipe

INGREDIENTS:

2 cans (17.5 oz each) Pillsbury refrigerated cinnamon rolls
1 medium apple, peeled, chopped
1/2 cup sugar
1 1/2 teaspoons ground cinnamon
1/4 cup butter, melted

DIRECTIONS:

1:  Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening or cooking spray.

2:  Separate each can of dough into 5 rolls and cut each roll into quarters.  Set icing aside.

3:  Place the chopped apple in small bowl. In another small bowl, mix sugar and cinnamon. Add 1/4 cup sugar mixture to apple and toss to coat.

4:  Sprinkle half of apple pieces in pan. Roll half of dough pieces in sugar mixture and place on top of the apples in pan.

4:  Sprinkle with remaining apple pieces. Roll remaining dough pieces in sugar mixture and place on apples. Pour melted butter over top.

5:  Bake 40 to 45 minutes or until golden brown across top. Cool 10 minutes then run knife around edge of pan to loosen. Place heatproof serving plate over pan and turn over to remove pan. Cool 10 minutes longer.

6:  Drizzle reserved icing over top of bread, allowing some to drizzle down sides. Pull apart to serve. Best to serve when still warm.

Darlene’s Tips: You could use brown sugar if you want. You could also try this with other fresh fruit like pears or peaches.  To make extra icing, simply mix powdered sugar with water or milk, a few drops at a time, until you get your desired consistency.

Bisquick Chocolate Chip Cookies Recipe

Bisquick Chocolate Chip Cookies Recipe

INGREDIENTS:

2 cups Bisquick mix
1/2 cup butter, softened
1 cup packed brown sugar
1 egg
1 cup semisweet chocolate chips

DIRECTIONS:

1:  Heat oven to 350°F. In large bowl, mix butter, brown sugar and egg until smooth. Add Bisquick and mix until combined. Stir in chocolate chips.

2:  Drop dough by tablespoonfuls onto ungreased cookie sheets about 2 inches apart.

3:  Bake 8 to 10 minutes or until set on edges and golden brown. Cool on cookie sheets 2 minutes. Remove from cookie sheets to cooling racks.

Darlene’s Tips: If you don’t have brown sugar, go ahead and use white sugar.  Add anything you want to the basic mix like chopped nuts, any flavor morsels, chunks of candy, raisins, whatever!
