INGREDIENTS:

2 cups packed brown sugar
3/4 cup butter
1/2 cup evaporated milk ()
3 cups powdered sugar
1 cup chopped candied pecans

DIRECTIONS:

1:  Spray bottom and sides of 8-inch square pan with cooking spray. In 3-quart saucepan, cook brown sugar, 3/4 cup butter and the milk over medium heat about 2 minutes, stirring constantly, until butter is melted and sugar is dissolved. Heat to full rolling boil and boil and stir 1 minute. Remove from heat.

2:  Add powdered sugar to the sauce pan and beat with electric mixer (in the sauce pan) on low speed 1 minute. Then beat 10 minutes on medium speed or until mixture begins to hold its shape and is warm to the touch. Quickly stir in pecans.

3:  Spread in pan. Refrigerate 2 hours or until firm. Cut into 8 rows by 8 rows. Store tightly covered at room temperature.

Darlene’s Tips: You can skip the pecans if you don’t like pecans. You could use walnuts or any nuts or no nuts.  You could also maybe add coconut or candy morsels or anything you can dream up!  A few drops of extract would be good too.  Lots of mixer time on this one. Not sure I want to mix something for 10 minutes. lol

1 box Pillsbury refrigerated pie crusts, softened as directed on box
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1 container (8 oz) frozen whipped topping, thawed
18 Oreo creme-filled chocolate sandwich cookies, coarsely chopped

DIRECTIONS:

1:  Heat oven to 425°F.

2:  (see my tips below) Soften 1 box Pillsbury refrigerated pie crusts as directed on box.  Unroll crusts and cut in half. Place long edges of crusts along sides of ungreased 13×9-inch rimmed baking pan, overlapping rounded parts on inside. Trim off any excess or overlapping dough and pinch seams closed. Prick dough all over with fork. Bake 10 minutes. Cool completely.

3:  In large bowl, beat 1 package (8 oz) cream cheese, softened, and 1/3 cup sugar with electric mixer on medium speed until smooth and creamy. Fold in 1 container (8 oz) frozen whipped topping, thawed, and 13 Oreo creme-filled chocolate sandwich cookies, coarsely chopped.

4:  Spread cream cheese mixture evenly over cooled crust. Sprinkle with 5 Oreo creme-filled chocolate sandwich cookies, coarsely chopped. Loosely cover with plastic wrap. Refrigerate 2 hours before serving.

Darlene’s Tips: You can use ready-made graham cracker crusts if you prefer. You’d need at least two, maybe three.  You can use any cookies that you want. This is a great dessert for a potluck!

Fruity Frozen Yogurt Popsicles Recipe

INGREDIENTS:

2 containers (6 oz each) of yogurt, flavor of your choice
2 cups cut-up fresh fruit such as blueberries, bananas, cherries, grapes, papaya, peaches, oranges, raspberries, strawberries, grapefruit, plums, mango or pineapple
1 tablespoon honey or corn syrup 
food quality popsicle sticks
4 or 5 oz paper cups

DIRECTIONS:

1:  Toss all ingredients in a blender. Cover and blend until smooth.

2:  Divide mixture among the (4 or 5-oz) paper cups. Cover cups with foil and insert craft stick into center of each pop.

3:  Freeze about 6 hours or until frozen.

Darlene’s Tips: You can write the flavor of the popsicle on the stick. If you want to make a variety of flavors, just cut the recipe in half (1 yogurt, 1 cup fruit, 1/2 tsp honey) or in quarters (1/2 yogurt, 1/2 cup fruit, drizzle of honey). You can also mix flavors like banana strawberry, cherry pineapple, etc. And if you don’t have honey or corn syrup, you can totally omit that ingredient. That just helps it to not freeze as hard.

24 baked cupcakes of your choice
Betty Crocker Rich & Creamy vanilla frosting
Yellow, red and black food color (depends on which animals you make)
Lion Decorations
1 1/2 cups caramel popcorn
12 brown miniature candy-coated chocolate baking bits
12 pretzel sticks
12 pieces Cheerios™ cereal (any flavor)
Tiger Decorations
12 brown miniature candy-coated chocolate baking bits
12 orange chewy fruit-flavored gumdrops (not sugar coated), cut in half crosswise, top halves discarded
Monkey Decorations
12 brown miniature candy-coated chocolate baking bits
6 miniature marshmallows, cut in half crosswise, pieces flattened
12 small round chocolate-covered creamy mints
Zebra Decorations
6 round vanilla wafer cookies
24 brown miniature candy-coated chocolate baking bits
6 black chewy licorice-flavored gumdrops (not sugar coated), cut in half vertically

DIRECTIONS:

1:  Decorate 24 cupcakes using the instructions below to make 6 lions, 6 tigers, 6 monkeys and 6 zebras. Or you can bake less cupcakes and create just one animal to use less ingredients.

2:  In small bowl, mix 1/2 cup chocolate frosting with black food color to make black frosting. Place in resealable plastic freezer bag and cut small tip off 1 corner of bag. Use black frosting to decorate lions, tigers, monkeys and zebras (steps 3 through 7).

3:  Lions and Tigers: In medium bowl, mix 1 cup vanilla frosting with enough yellow and red food colors to make orange. In small bowl, mix 1 tablespoon orange frosting with 3 tablespoons white vanilla frosting to make lighter orange for muzzles. Frost 12 cupcakes with darker orange frosting. For muzzle, spread or pipe small circle of lighter orange frosting on each cupcake.

4:  For lions, place caramel corn around edges of cupcakes for mane. For eyes, add brown baking bits. For whiskers, break about 1/2-inch pieces off each end of pretzel sticks and insert in cupcakes. For ears, add cereal pieces. Using black frosting, pipe on mouth and nose.

5:  For tigers, use black frosting to pipe on stripes, nose and mouth. For eyes, add brown baking bits. For ears, add gumdrop halves.

6:  Monkeys: Frost 6 cupcakes with chocolate frosting. In small bowl, mix 1 tablespoon chocolate frosting and 2 tablespoons vanilla frosting to make light brown. For muzzle, spread or pipe circle of light brown on each cupcake that starts in middle and extends to edge; pipe small tuft of hair on opposite edge. For each eye, attach brown baking bit to marshmallow half with frosting; place on cupcakes. With black frosting, pipe on nose and mouth. For ears, add mints.

7:  Zebras: Cut small horizontal slit in top of 6 cupcakes near edge of paper cup. Insert edge of vanilla wafer cookie into each slit to create elongated face, adding small amount of vanilla frosting to cookie before inserting to help stick. Frost cupcakes with vanilla frosting. For muzzles, frost cookies with black frosting. With black frosting, pipe on stripes and mane. Add brown baking bits for nostrils and eyes. For ears, add black gumdrop halves, cut sides down.

Darlene’s Tips: Make it easy and just look at the images and use whatever you think you can use to create the animals.  You could use black licorice for decorating instead of black frosting. These would be awesome for a birthday party!

Pancake Bread
1 1/2 cups Original Bisquick mix
1/2 cup granulated sugar
1/2 cup buttermilk
2 tablespoons butter, softened
3/4 teaspoon maple extract
1/2 teaspoon vanilla
1 egg
Streusel
1/3 cup Original Bisquick mix
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons butter, softened

DIRECTIONS:

1:  Heat oven to 325°F. Grease bottom and sides of 8×4-inch loaf pan with shortening. Lightly flour.

2:  In large bowl, beat Pancake Bread ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour into pan.  Bake 30 minutes.

3:  Meanwhile, in medium bowl, stir Streusel ingredients with fork until crumbly.

4:  Carefully sprinkle streusel over top of partially baked bread. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Loosen sides of loaf from pan and remove from pan.  Place top side up on cooling rack. Cool completely for about 1 1/2 hours.

Darlene’s Tips: Drizzle syrup on this bread and add a dollop of whipped topping when serving. Bet that would be delish!

2 cans (16.3 oz each) Pillsbury Grands! Flaky Layers refrigerated biscuits
1/2 cup granulated sugar
1 teaspoon cinnamon
1 cup firmly packed brown sugar
3/4 cup butter or margarine, melted
optional: 1/2 cup chopped walnuts
optional: 1/2 cup raisins

DIRECTIONS:

1:  Heat oven to 350°F. Generously grease 12-cup fluted tube pan with shortening or cooking spray.

2:  Mix granulated sugar and cinnamon in a large 1-gallon plastic food storage bag.  Separate dough into 16 biscuits and cut each into quarters. Shake in bag to coat. Arrange in pan (add walnuts and raisins among the biscuit pieces if desired). Sprinkle any remaining sugar over biscuits.

3:  Mix brown sugar and butter in a small bowl and pour over biscuit pieces.

4:  Bake 30 to 40 minutes or until golden brown and no longer doughy in center. Loosen edges of pan with metal spatula. Cool in pan 5 minutes. Turn upside down onto serving plate; replacing any biscuit pieces and caramel from pan. Pull apart to serve. Serve warm.

Darlene’s Tips: Serve with a dollop of whipped topping or a side of ice cream.  You could also add some chopped apples or banana slices to this with or without the nuts and raisins. Experiment!
