Deconstructed Beef Burrito Recipe

INGREDIENTS:

1 lb ground beef (at least 80% lean)
1 cup water
1 cup salsa of your choice
1 can (15 oz) black beans, drained, rinsed
1 package (1 oz) taco seasoning mix
4 (6-inch) flour tortillas, cut in 1-inch strips
1 cup shredded Mexican cheese blend (4 oz)
optional: 1/4 cup sliced green onions

DIRECTIONS:
1: Cook beef over medium heat in 12-inch skillet for 8 to 10 minutes, stirring occasionally, until no longer pink. Drain.
2: Add water, salsa, beans and taco seasoning mix to skillet with ground beef. Cook 3 to 5 minutes or until sauce thickens. Reduce heat to low.
3: Stir in tortilla strips and cook 1 minute.
4: Top with cheese, cover, and remove skillet from heat. Let stand 3 to 5 minutes or until cheese is melted. Optional: top with green onions before serving.
Darlene’s Tips: You could swap out the black beans for pinto beans or any of your favorite beans. Serve with a side of spanish rice along with sour cream, pico de gallo and guacamole!
