Creamsicle Ice Cream Pie Recipe

Creamsicle Ice Cream Pie Recipe

INGREDIENTS:

1 pouch Betty Crocker sugar cookie mix
1/2 cup butter or margarine, softened
4 cups orange sherbet
2 cups vanilla ice cream
(see my tips below)

DIRECTIONS:

1:  Heat oven to 375°F. In medium bowl, stir cookie mix and butter until well mixed (mixture will be crumbly). Reserve 1+1/2 cups crumb mixture and set aside.

2:   In ungreased 9-inch glass pie plate, press remaining mixture over bottom and up side of plate then prick with fork. Bake 16 to 18 minutes or until light golden brown. Cool completely, about 1 hour.

3:  Meanwhile, on ungreased cookie sheet, sprinkle remaining 1+1/2 cups crumb mixture. Bake 10 to 11 minutes or until edges of crumb mixture begin to brown. Cool on cookie sheet, about 30 minutes.

4:  While crust and crumb mixture are cooling, place sherbet and ice cream on counter to soften. Scoop half of softened sherbet over crust and spread to cover crust. Sprinkle with 1/2 cup crumbs. Scoop all of softened ice cream over sherbet and crumbs and spread to cover. Sprinkle with 1/2 cup crumbs. Scoop remaining half of sherbet over ice cream and crumbs. Sprinkle with remaining 1/2 cup crumbs.

5:  Freeze until firm, 4 to 6 hours or overnight. Let stand 15 minutes to soften before cutting.

Darlene’s Tips:  You can make this super simple by using a ready made graham cracker crust.  No need to add any crumbles, or you could crush any cookies of your choice to use for crumbles. Need enough for a party? Make this in a large cake pan! Just use any cookie dough for the crust. Flatten it to fit the pan.

5-Ingredient Rhubarb Squares Recipe – Summer Potluck Dessert

5-Ingredient Rhubarb Squares Recipe

INGREDIENTS:

1 box Betty Crocker Super Moist yellow cake mix
3/4 cup cold butter or margarine, cut into small pieces
1 3/4 cups sugar
3 eggs
4 cups sliced fresh rhubarb

DIRECTIONS:

1:  Heat oven to 350°F (325°F for dark or nonstick pan). Reserve 2 tablespoons of the cake mix. In large bowl, cut butter into remaining cake mix, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly.

2:  Pat 2 cups of the mixture in bottom of ungreased 13×9-inch pan. Reserve remaining crumbly mixture for topping. Bake 13 minutes.

3:  In large bowl, beat reserved 2 tablespoons cake mix, the sugar and eggs with electric mixer on medium speed until creamy. Stir in rhubarb. Pour over partially baked crust. Sprinkle remaining crumbly mixture over top.

4:  Bake 45 to 50 minutes longer or until golden brown and center is set. Cool slightly before serving. Serve warm or cold with whipped cream. Store covered in refrigerator.

Darlene’s Tips:  If you can’t get fresh rhubarb, you can use 4 cups of frozen rhubarb, slightly thawed. You could also try this with fresh or frozen strawberries, blueberries, peaches or any other fruit or berry!  Top with whipped topping or ice cream.

Frozen Yogurt Bites Recipe – Just 2 Ingredients

Frozen Yogurt Bites Recipe

INGREDIENTS:

1 container (6 oz) Yoplait yogurt, any flavor (or store brand)
2 tablespoons finely chopped fresh fruit (blueberries, bananas, strawberries, grapes, peaches, oranges, etc)
you might like food grade popsicle sticks and silicone ice cube trays
(see my tips below)

DIRECTIONS:

1: Stir yogurt and fruit in bowl until well blended.

2: Divide mixture among 6 compartments of a silicone ice cube tray.

3:  Insert stick into center of each compartment. Freeze about 4 hours or until frozen.

Darlene’s Tips:  You can use ice cube trays. You can also use frozen fruits or berries or canned fruit for this recipe. Let frozen fruits or berries thaw a bit so you can chop them. Drain canned fruit then chop and add to the mix.
