INGREDIENTS:

24 oz. Dole pineapple chunks frozen, half-thawed
1 cup milk
1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
Pinch of salt
(see my tips below)
See my Darlene’s Concoctions videos here!
DIRECTIONS:
1: Add half-thawed pineapple, milk, vanilla, lemon juice, and a pinch of salt to a blender and blend until very smooth. At this point, the whip will have a very soft consistency. You can serve it like this if you want.
2: You can freeze individual servings, but they will turn very hard. Thaw leftovers in the microwave on low heat for a minute or two, so it becomes a soft, smooth texture again.
Darlene’s Tips: If the whip is too soft after the first step, you could freeze in a covered container for maybe a couple of hours, stirring every 30 minutes or so, until it’s a bit more frozen.
