Taco Spiced Sweet Potato Fries Recipe

INGREDIENTS:
2 medium or 3 small sweet potatoes, peeled, cut into 1/2-inch strips
1 tablespoon olive oil
6 teaspoons Old El Paso taco seasoning mix (from 1-oz package)

DIRECTIONS:
1: Heat oven to 350°F. In large bowl, toss sweet potatoes with oil and taco seasoning mix until coated. Spread potatoes in single layer on ungreased cookie sheet.
2: Bake 20 to 30 minutes, turning once or twice, until potatoes are lightly browned and tender
Darlene’s Tips: For crispier fries be sure they are not overlapping. You could also try baking on a rack instead of directly on the pan. I love the idea of serving in a bag like shown in the pic. I did that all the time when feeding a bunch of kids, especially with popcorn. You can cut the bottom of a lunch bag, leaving it about 2 or 3 inches tall, and use that as a boat to hold the fries… or anything! Save the top of the bag for crafts. Or you can fold the top of the bag and place in the bottom of the boat for a sturdier bottom. No dishes to wash! And use any seasoning you want, or no seasoning at all. You could also cut into wide steak fries or round slices… do whatever you want. I will be making these for my mother then will freeze for when she wants some!
