Peach Pie Cups Recipe

INGREDIENTS:

1 can (12.4 oz) Pillsbury refrigerated cinnamon rolls with cream cheese icing (8 rolls)
1 1/3 cups peach pie filling & topping (from 21-oz can), coarsely chopped

DIRECTIONS:

1:  Heat oven to 375°F. Spray 8 regular-size muffin cups with cooking spray.

2:  Separate dough into 8 rolls, and let stand 10 minutes at room temperature.  Set icing aside.

3:  Place rolls cinnamon side up into muffin cups. Press in bottoms and up sides of cups.

4:  Spoon 2 generous tablespoons of pie filling into each dough-lined cup. Bake 14 to 18 minutes or until golden brown. Cool in pan 5 minutes.

5:  Run a butter knife around edges of rolls to loosen and remove to serving plate. Drizzle icing over rolls. Serve warm. Can be reheated in the microwave for 10 second intervals until warm.

Darlene’s Tips:  You can do this with any pie filling you like. I did it for my mother with cherry pie filling.  Want more icing? Just put some powdered sugar in a cup or bowl and add a few drops of water or milk at a time until you get the consistency that you want. You can add a drop of food coloring too or any flavor extract. Sprinkle with chopped nuts if desired.

Super Easy Cheeseburger Pie Recipe

INGREDIENTS:

1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese
1/2 cup Original Bisquick mix
1 cup milk
2 eggs

DIRECTIONS:

1: Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.

2: In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.

3: In small bowl, stir Bisquick, milk and eggs with fork or wire whisk until blended. Pour into pie plate over meat mixture.

4: Bake about 25 minutes or until knife inserted in center comes out clean.

Darlene’s Tips:  You can use any ground meat. You could also add green peppers if you like or even hot peppers for a spicy pie. For a real “burger” experience, serve topped with your favorite burger ingredients like sliced tomatoes, pickles, shredded lettuce. Don’t forget the ketchup and serve with a side of fries!
