Way Too Easy Peppermint Bark Recipe

INGREDIENTS:

1 package (16 ounces) almond bark, broken into pieces, or any white morsels
24 hard peppermint candies

DIRECTIONS:

1:  Cover cookie sheet with waxed paper, aluminum foil or cooking parchment paper. Place candy coating in 8-cup microwavable measure or 2-quart microwavable casserole. Microwave uncovered on High 2 to 3 minutes, stirring every 30 seconds, until almost melted. (best to melt according to the instructions on the bark or morsels you buy). Stir until smooth.

2:  Place peppermint candies in heavy plastic bag and crush with rolling pin or bottom of small heavy saucepan. Pour crushed candies into wire strainer. Shake strainer over melted coating until all of the tiniest candy pieces fall into the coating. Reserve the larger candy pieces. Stir coating to mix evenly.

3:  Spread coating evenly on cookie sheet. Sprinkle evenly with remaining candy pieces. Let stand about 1 hour or until cool and hardened. Break into pieces.

Darlene’s Tips:  You can add a drop of peppermint extract if you want extra peppermint flavor. You can make chocolate peppermint bark the same way using chocolate morsels.

Polar Bear Cookies Recipe

INGREDIENTS:

check for ingredient coupons here
Round cookies of your choice (store bought or bake your own)
Vanilla frosting (store bought or make your own)
Miniature white marshmallows
Chocolate icing or brown or black icing or gel (store bought or make your own)
optional: coarse white sparkling sugar
(see my tips below)

DIRECTIONS:

1:  Using knife, spread 1 teaspoon frosting on cookie. (optional: immediately sprinkle sugar evenly over frosting for snowflakes.)

2:  Slightly flatten 2 miniature marshmallows, and press on cookie for ears.

3:  Using chocolate (or brown or black icing), pipe eyes, nose and mouth on cookie.

Darlene’s Tips:  You can use any color icing for the eyes and face. No law saying they have to be black or brown! You could also use chocolate chips for the eyes and pieces of black shoestring licorice for the nose and mouth.
