Peanut Butter & Chocolate Cookie Cake Recipe

Peanut Butter & Chocolate Cookie Cake Recipe

INGREDIENTS:

check for ingredient coupons here
1 pouch (1 lb 1.5 oz) Betty Crocker peanut butter cookie mix
Vegetable oil, water and egg called for on cookie mix pouch
1 box Betty Crocker Super Moist chocolate fudge cake mix
1 box (3.4 oz) Jell-O chocolate flavor instant pudding & pie filling mix
1 1/2 cups milk

DIRECTIONS:

1: Heat oven to 350°F. Spray bottom and sides of 13×9-inch pan with cooking spray.

2: In medium bowl, stir cookie mix, oil, water and egg until soft dough forms. Set aside.

3: In large bowl, beat pudding mix and milk with whisk 2 minutes. Stir in cake mix until combined. Spread cake batter evenly in pan.

4: Top cake batter evenly with rounded tablespoons of cookie dough.

5: Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. You can cover the cake with foil halfway through baking if cookies begin to turn dark brown on top. Serve warm or at room temperature.

Tuesday Chat – Having Fun with eBay

It’s Tuesday!

I had a fairly productive day yesterday. I got 3 of the 6 most important items on my to-do list done. That’s not half bad! lol

One thing I got done that was not even on my list was to put another item on ebay. I have been with ebay since the year 2000, February 20, 2000, to be exact. During these past 18 years, I have listed a gazillion items. And I loved listing at one penny with free shipping. I even listed many of my plus size tunics at that price.

I want to start regularly listing those fun penny auctions again! At least for a little bit. It’s a slow ass way of getting stuff out of my personal stash, but it’s at least a step in the right direction. As long as I’m at least getting enough overall bids to cover my postage and the ebay fees, I’m good with that. And I really do get excited when someone wins something at a very low price! Like I said, I look at the overall picture, so even if some stuff goes for practically nothing, I make up for it on other items. Expect more listings soon! I am going to try to list daily for a little bit!

As for today, still so many things to do. It never ends, not for me, not for you, not for anyone. Just. Never. Ends. Well, one day it will end for all of us. And the end better be a silent place for me! lol

I’m stressing out over my 10:45am appointment on Thursday. I have to leave the house at 10:am. That means I must get up at 8:00am just to wake up enough to drive. I know! I know! That’s not early to most people. But to me, I might as well be getting up at 2:00am, because that’s how hard it will be for me to get up at 8:00am. Just the fact that I have to set an alarm torments me. I can’t even believe I’ve had to actually get up at 2:00am several times to fly out to see Skylar. So yes, it can be done. But yes, I hate it with a passion.

As it is, it’s almost 1:00pm as I type this and I’m still not fully awake. Ugh.

When shopping on ebay, always read the descriptions. Some items ship from overseas and can take a few weeks to arrive. Usually the description will state how long shipping might take. Also, for clothing, overseas sizes usually run on the small size so it’s good to order larger by a size or two. Always check the shipping charges. I’m not familiar with these sellers so please do your homework and shop accordingly. Some offer special deals like getting a free item or a percentage off if you buy a certain quantity so be sure you pay attention to that too!

Chocolate Chip Cream Cheese Brownies Recipe

INGREDIENTS:

Filling
4 oz cream cheese, softened (from 8 oz package)
1/3 cup sugar
1 egg
Brownies
1 box (1 lb 6.25 oz) Betty Crocker Supreme original brownie mix
Water, vegetable oil and eggs called for on brownie mix box
3/4 cup chocolate chips of your choice

DIRECTIONS:

1: Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 13×9-inch pan with shortening or cooking spray. In medium bowl, beat cream cheese and sugar with electric mixer on low speed until smooth. Add egg and beat until well blended. Set aside.

2: Make brownie batter as directed on box. Spread three-fourths of the batter in pan. Spoon filling by tablespoonfuls evenly onto batter. Spoon remaining batter over filling. Cut through mixture several times with knife for marbled design. Sprinkle with chocolate chips.

3: Bake 33 to 37 minutes or until toothpick inserted in brownie 1 inch from side of pan comes out almost clean. Cool completely, about 1 1/2 hours.

Darlene’s Tips: You could also add any chopped nuts of your choice. And you could use peanut butter morsels or white morsels… even butterscotch morsels would be awesome!
