It’s Wednesday!
I can’t put it off any longer. I must hit Walmart today. I plan on going out as soon as I publish this post. Of course, I’m taking you in the store with me to you can expect a tag along video later.
Yesterday, I had another doctor appointment which really was not helpful at all with any decisions I have to make. In fact, I was more confused and also feeling quite uncertain as to what I should do. I get conflicting advice then I’m expected to make a big decisions based on that conflicting info. I don’t like that. Tomorrow I’m calling a cancer center and hopefully I can see someone there. (follow me on patreon for more info and updates)
Yesterday, I also went swimming. And I recorded a car vlog but decided to not even bother editing it. It felt forced. I’m letting my old habit of recording daily slip back in and I simply do not want to do that. I have too many other things I need to do. So I trashed yesterday’s recording and just let myself feel guilty.
Now I really must run! I have lots to do when I get back so I want to just get this outing over with so I can come home and work.

When shopping on ebay, always read the descriptions. Some items ship from overseas and can take a few weeks to arrive. Usually the description will state how long shipping might take. Also, for clothing, overseas sizes usually run on the small size so it’s good to order larger by a size or two. Always check the shipping charges. I’m not familiar with these sellers so please do your homework and shop accordingly. Some offer special deals like getting a free item or a percentage off if you buy a certain quantity so be sure you pay attention to that too!

Chicken Bacon Ranch Potato Salad Recipe

INGREDIENTS:

3 large baking potatoes (about 2 1/2 lb)
1/2 cup mayonnaise
1/2 cup ranch dressing
6 strips bacon, crisply cooked and cut into bite-size pieces
5 cooked chicken tenders (boneless), cut into bite-size pieces
(see my tips below)

DIRECTIONS:
1: Boil 3 large baking potatoes (about 2 1/2 lb) in large pot of water until fork easily pierces with little resistance. Drain; cool completely on cooling rack (about 1 hour).
2: Peel potatoes; cut into bite-size pieces. Place in large bowl.
3: In separate bowl, beat 1/2 cup mayonnaise and 1/2 cup ranch dressing with whisk. Fold into potatoes. Add 6 strips thick-cut bacon, crisply cooked and cut into bite-size pieces. Add chicken tenders (boneless), cut into bite-size pieces. Fold again to lightly coat with sauce.
4: Season with salt and pepper to taste. Refrigerate until ready to serve.
Darlene’s Tips: You don’t have to use breaded chicken. Cut up any leftover cooked chicken! You can also experiment with different dressing flavors. Thousand Island is awesome in a potato salad!

It’s Tuesday!
And I have another doctor appointment today. I will be seeing my primary care doctor to go over what the specialists have told me so far. I also need to have my blood pressure checked and maybe get my meds adjusted. One of the symptoms of my kind of cancer is high blood pressure. My spike in blood pressure was very high and sudden. I wish my doctor would have seen that as a sign of something wrong instead of just trying to lower it. He’s human, I guess.
After my appointment I need to pick up 4 movies that I returned to the Springvale library and return them to their proper home at the Sanford library. I’m an idiot. Well, that, and lots on my mind.
I will try to record while I’m out and about today. But I might come home first, change to go swimming, then do a car vlog. Not sure. All depends on how I feel later.
I have started a crocheted afghan series but it will be a bit before I can really work on it. I don’t want to upload any part of it until I’m done. This week is filled with appointments and I’m also back to recording for ASMR since all my pre-recorded videos are used up. Just busy. Always. But I will at some point have that crochet video up and it will be Derrick’s first video of mine that he edits. Poor him. He gets to listen to me. lol
I’ve got to run!

Easy Chocolate Chip Oatmeal Cookies Recipe

INGREDIENTS:

1 pouch (1 lb 1.5 oz) Betty Crocker chocolate chip cookie mix
1 pouch (1 lb 1.5 oz) Betty Crocker peanut butter cookie mix
1 1/2 cups quick-cooking oats
1 cup butter or margarine, softened
3 eggs
2 cups M&M’s chocolate candies
(see my tips below)

DIRECTIONS:
1: Heat oven to 375°F. In large bowl, stir all ingredients except candies until soft dough forms. Stir in candies.
2: On ungreased cookie sheets, place about 1/4 cupfuls dough about 3 inches apart.
3: Bake 12 to 13 minutes or until light golden brown. Cool 2 minutes; remove from cookie sheets. Cool completely. Store in covered container at room temperature.
Darlene’s Tips: You can add just about anything you want to this mix! Raisins would be good or some chopped nuts. Experiment!
