Overly Loaded Christmas Cookies Recipe – Easy Cookie Mix Hack

INGREDIENTS:
check for ingredient coupons here
1 pouch (17.5 oz) Betty Crocker chocolate chip cookie mix
Butter and egg called for on cookie mix pouch
1/2 cup green and red M&M’s candy-coated milk chocolate candies
1/2 cup miniature marshmallows
1/3 cup coarsely crushed mini pretzel twists
1/4 cup chopped peanuts
2 tablespoons green, red and white candy sprinkles

DIRECTIONS:

1:  Heat oven to 375°F. Line cookie sheets with cooking parchment paper.

2:  In large bowl, stir cookie mix, butter and egg until soft dough forms. Stir in remaining ingredients.

3:  Drop dough by rounded 2 tablespoonfuls on cookie sheets 2 inches apart. Flatten a bit with the back of a spoon.

4:  Bake 9 to 11 minutes or until light brown. Cool 2 minutes then remove from cookie sheets to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.

Darlene’s Tips: Want to change the ingredients?  You can!  Use any flavor cookie mix and add up to 1½ cups total of candies or crunchies of your choice. Create the wildest mix ever!

Slow-Cooker Pumpkin Harvest Chex Mix Recipe

INGREDIENTS:

2 cups Cinnamon Chex cereal
2 cups Wheat Chex cereal
3 cups Vanilla Chex cereal
1 cup pecans
1 cup mini graham crackers
1 cup dried cranberries
1/2 cup pumpkin seeds (not in the shell)
1/2 cup butter, melted
1/4 cup packed brown sugar
1 tablespoon pumpkin pie spice
(see my tips below)

DIRECTIONS:

1:  Stir together the 3 cereals, pecans, graham crackers, dried cranberries and pumpkin seeds in a 5 to 6 quart slow cooker.

2:  In small bowl, mix together melted butter, brown sugar and pumpkin pie spice. Stir until well combined. Pour over cereal mixture and stir until evenly coated.

3:  Cook uncovered on High heat setting 2 hours, stirring every 15 to 20 minutes.

4:  Spread cereal mixture on ungreased cookie sheet or waxed paper. Cool 3 to 5 minutes before serving.

Darlene’s Tips: You can change this recipe any way you want.  If you don’t want to buy 3 different kinds of chex cereal, buy just one kind and use a total of 7 cups. If you can’t find cinnamon chex just use plain chex and add cinnamon to the mix. Instead of pumpkin pie spice you can use apple pie spice or just use a mix of cinnamon and nutmeg or you can skip the spice.  Once the snack mix is cooled you could toss in some butterscotch or chocolate (or both) morsels and something chewy like raisins. If you can’t find mini graham crackers at your local store, simply use broken full-size graham crackers.

Salted Caramel Chocolate Chip Cookies Recipe – Refrigerated Cookie Dough Hack

INGREDIENTS:

1 roll (16.5 oz) Pillsbury refrigerated chocolate chip cookies
1/3 cup all-purpose flour
1/2 cup finely chopped pecans
24 caramels, unwrapped (from 14-oz bag)
2 tablespoons half-and-half or milk
1/3 cup semisweet chocolate chips, melted
1 teaspoon coarse sea salt
(see my tips below)

DIRECTIONS:

1:  Heat oven to 350°F.  Break up cookie dough in large bowl. Stir or knead in flour until well blended.

2:  Shape tablespoonfuls of dough into balls.  Roll the balls in the pecans and press the pecans into dough a bit by rolling each peacan covered ball between your hands. Place balls 1 inch apart on ungreased cookie sheets.

3:  Bake 12 to 16 minutes or until edges are light golden brown. Remove from oven, and using handle of wooden spoon, immediately make an indentation in center of each cookie. Cool 1 minute then remove from cookie sheet to cooling racks. Cool completely, about 20 minutes.

4:  Microwave caramels and half-and-half (or milk) in a microwavable bowl uncovered on High 1 to 2 minutes, stirring every 10 to 15 seconds, until caramels are melted.

5:  Spoon about 1 teaspoonful of caramel into indentation of each cookie. Cool 15 minutes.

6:  Melt chocolate in microwave on high in 10 second intervals stirring after each until melted. Drizzle the melted chocolate over the cookies using a spoon then sprinkle with salt. Let stand about 15 minutes or until chocolate is set, or place in refrigerator or even the freezer to speed up that time.

Darlene’s Tips: You could totally skip the pecans if you want.  No need to roll the balls into anything. Or use different nuts if you prefer.  Salt is optional too.  If you like the look of the crystals but don’t want the salt, sprinkle with coarse sugar instead.

1/3 cup vegetable oil
2 eggs
Powdered sugar

DIRECTIONS:

1:  Heat oven to 350°F. In large bowl, stir dry cake mix, oil and eggs with spoon until dough forms.  Refrigerate dough 15 to 30 minutes for easier handling.

2:  Shape refrigerated dough into 1-inch balls. Roll balls in powdered sugar. Place balls about 2 inches apart on ungreased cookie sheets.

3:  Bake 9 to 11 minutes or until set. Cool 1 minute then remove from cookie sheets to cooling rack. Cool completely, about 30 minutes. Store tightly covered.

Darlene’s Tips: You can add up to 1 cup total of other ingredients like chocolate chips, chopped nuts, m&m candies, whatever you like!

Cake Mix Chewy Chocolate Chip Cookies – Easy 4 Ingredient Cake Mix Hack

1/2 cup butter, softened (you can use 1/2 cup veg oil instead)
1 egg
1 cup chocolate chips

DIRECTIONS:

1:  Heat oven to 350°F. Mix, cake mix, butter and egg in large bowl by hand (or with mixer) until smooth.  If dough is too dry, add a tablespoon or two of water.

2:  Drop dough by tablespoonfuls 2 inches apart on ungreased cookie sheets.

3:  Bake 10 to 12 minutes or until edges are set (centers will be soft and cookies will be very light in color). Remove from oven and cool 1 minute then remove from cookie sheets to cooling rack. Store covered.

Darlene’s Tips: You can add up to 1/2 cup of chopped nuts of your choice, or other ingredients like raising, m&m candies, chewy candies, other flavor morsels, stuff like that.
