Easy Christmas Tree Cheese Ball Recipe

NOTE: I get messages asking me why I post these types of recipes while I’m following a zero carb animal kingdom only food plan.  My answer is because I’m following ZC, but I bet you’re not! Just because I eat a certain way does not mean I have to limit myself to sharing only meat recipes. I’m not the carb police! lol

Be sure you check out Darlene’s Concoctions!!!

Easy Christmas Tree Cheese Balls Recipe

INGREDIENTS:

3 packages (8 ounces each) cream cheese, softened
4 cups shredded Cheddar cheese (16 ounces)
2 tablespoons basil pesto
1 tablespoon grated onion
1/4 teaspoon yellow mustard
Red pepper sauce
1/4 cup finely chopped parsley or cilantro
1/4 cup pine nuts or sliced almonds
2 tablespoons chopped red bell pepper
Piece of lemon peel, if desired
Assorted crackers, if desired

Darlene’s Tip:  You can turn this into a SUPER EASY recipe by using just the cream cheese and the cheddar cheese. You don’t need all that other stuff!  It will still be good. Delish even!  Or add whatever flavors you want to the cheese mix.  Then roll in parsley or cilantro as stated and decorate any way you want. What a nice treat to bring to a christmas party!

DIRECTIONS:

Step 1: Stir together cream cheese and Cheddar cheese; divide in half. Stir pesto into 1 half; stir onion, mustard and 2 or 3 drops pepper sauce into other half. Cover each half; refrigerate about 4 hours or until firm enough to shape.

Step 2:  Place cheese mixtures on cookie sheet. Shape each half into cone shape to look like a pine tree.

Step 3:  If desired, wrap each tree, label and freeze up to 1 month. Twelve hours before serving, remove trees from freezer. Thaw in wrapper in refrigerator.

Step 4:  Just before serving, roll trees in parsley, pressing it evenly onto trees. Press pine nuts onto trees in string form for garland. Press bell pepper pieces onto trees for ornaments. Top each tree with star shape cut from lemon peel. Serve with crackers.

What I Ate Yesterday – Day 24

REMINDER:  I will be weighing myself for you on January 1st, so don’t forgot to come back for that! I’m not in this for the weight loss, but I know many are curious (me too) so I will be reporting my weight for curious minds!

READING MATERIAL: Zero Carb Interview: Amber O’Hearn (she’s been eating ZC since 2009, her bi-polar disorder is in remission, she lost 60 pounds, she likes her ground beef raw, and she lets her child munch on a stick of butter!)

Yesterday – Saturday 12/10 – Day 24

I had my usual cup of coffee when I got up with HWC.

At 1:30pm, I grabbed a bag of frozen cooked meat mix, leftovers that I froze just before Thanksgiving. I heated that up in a pan with water and butter.  It consisted of a variety of meats which I list below. I also added some ground pork to that mix and some rotisserie chicken.  I love mixed meat!  And I added butter on top as seen above.  I ate all the chicken but then only a bit more than half of the mixed meat. I was satisfied.

At 3:00pm I had decafe with HWC.

At 5:30pm, I cooked some slices of shoulder roast in butter and sprinkled them with pepper. I cooked them rare. I love rare beef (I love raw too, more about that later). Not sure how much I ate because I don’t keep track of anything like that, but it was a plateful. I eat when I’m hungry and eat until I’m satisfied.

Note:  There is a difference between eating until “satisfied” and eating until “full.”  I eat until satisfied, even if I’m full. That means that my body might be physically full, but for whatever reason, maybe from years of habit, my brain wants me to just keep eating.  So I do.  I don’t care if I hurt from being too stuffed.  I don’t care if I might gain weight.  I trust that both my body and brain will eventually send me better signals as to when I’m actually full. Better to eat too much than not enough. It’s brain food! lol

At 9:00pm, I got hungry again.  I cooked 6 eggs in butter and also cooked more slices of shoulder roast. I ate 4 of the eggs and almost all the meat on my plate.  I had a massive appetite yesterday!

Food that entered my mouth yesterday:  beef (ground, shoulder, eye round and rump), pork (ground, bacon), chicken, eggs, cream (heavy and light), butter, coffee (reg and decafe), pepper, water.

This is the article that I stumbled upon by Kelly Hogan which got me immensely excited.   And this is Kelly’s blog.

PLEASE READ: Please remember that it’s MY CHOICE to eat the way I want. If you think this is unhealthy, know I’m not as concerned with physical health. I’m more concerned with my mental health. I’m on a mission to feel better mentally… without cravings!!! I’m willing to test this so you don’t have to! But what works for me might not work for you. I’m not doing this to lose weight. I’m doing this because I’m convinced that I’m overly sensitive to carbs and that I must stay away from them if there is any chance of me feeling better. I’m eating from the animal kingdom only, like the complete opposite of vegan. I know this upsets many, but I promise I won’t eat your pets. You are free to follow my progress/failures and you can even disagree with what I do. Just remember that I will get the last word because it’s my blog, my channel, my life! That’s the new me talking! (I think I’m growing balls! Let me look… yes, I see one starting to grow!)

Sunday Chat – Crustless Squash Pie? Easy Sewing Project? I Booked a Flight to Memphis!!!

I use affiliate links in some of my posts. I may earn a commission if you use my links. Full disclosure.

chat-sunday

It’s Sunday!

I think I slept better last night!  Still must go dig out my cpap machine for my apnea.  Must!!!  I’m sure I also need new parts which is part of the reason I keep procrastinating about it.

Today is Sunday which is food freezing day, but I really think my mother has enough for another week.  So I think that is going to be an every other week series.

As for the squash that I cooked yesterday (buttercup squash in the microwave), I don’t think I’ll freeze the rest of the squash as planned. I want to make a squash pie for my mother, sans the crust, because she’s not big on pie crust. So it would just be more like a squash custard. Might do that today!

And guess what I did last night?  I booked a flight to Memphis!  I won’t be going over Christmas break like I hoped. Just too many reasons not to. First, the price was too high and the travel dates were just not working out. And even worse, I had to fly out of Manchester instead of Portland.  But Skylar has a long weekend for MLK day in January so that’s when I’m going!  My dates are Jan 12 – 17.  I can’t wait!!!  Bring on the crafts! lol  Oh, and this time we’ll make whipped cream and not let it turn to butter!

I also finished my cousin’s quilt last night, so I’ll be showing you that soon. Hopefully today!  Then I need to think of what to make next. I’d love to show you a super easy project this time. Will try hard to think of something!

I want to remind you about my other blogs:

What I Ate Yesterday – Day 23

Yesterday – Friday 12/9 – Day 23

When I got up, I had my daily coffee with heavy cream. I had a tall one yesterday, but very, very weak.  I actually tried just hot water with HWC but it was too blah. So for now, I’m sticking to weak coffee, just for that added flavor.  It’s a habit I’m not ready to quit yet because I really need help waking up on most days.  But I bet that will change over time!

At 1:30pm, I sliced up more beef shoulder roast and cooked that in a pan with butter. Then I added more of the meat mix I made the other day (you can watch me cook it here) to warm it up.  Once again, I did not feel the need to have extra butter on my plate, so I didn’t add any.   I ate almost every bit of what you see above.

Note: I was super full of energy yesterday after that wonderful meal, and I got all kinds of stuff done around the house! This is so exciting for me!  I hope so much this lasts. I swear, it’s like I was high on life!  And as a reminder, I do NOT snack at all. Not at all.  Nothing enters my mouth other than what I post here. I don’t even taste stuff that I might make for my mother. No finger licking unless I’m eating meat with my hands like a proper cave girl!

At 9:30pm, I got hungry. I can go from satisfied to hungry in a matter of monents! So I fixed another plate exactly like you see above, and once again, I ate almost every bit of it.  Then I had a shot of HWC with a light cream floater and downed that like it was tequila.

Food that entered my mouth yesterday:  beef (ground, shoulder roast), pork (tenderloin, bacon), cream (heavy and light), butter, coffee, water.

Happy Saturday!

Last night I uploaded a quick sewing tip on How to Make a Rag Quilt More Raggedy.  For those of you who make rag quilts, I think you’ll love this tip!

Today, I hope to finally get around to cooking the squash that I keep promising you!  Then I’ll be freezing that for my mother.

I also hope to finish my cousin’s quilt today. Then I’ll be showing you that and we’ll be able to see if my rag quilt tip above worked! lol

Not much else to say.  It’s sunny and me no likie.  And I only slept about 4 hours, so I might be dragging today.  Or maybe not!  The meat might carry me through! 🙂

Have a great Saturday!

Darlene
