What I Ate Yesterday – Day 17

Yesterday – Saturday 12/3 – Day 17

I didn’t even think about my coffee when I woke up.  Woke up quite refreshed.

At 2:00pm I cooked the concoction you see above. This mix included bacon, ground beef, rump roast and deli ham. It was fabulous and I ate every bit of it. For some reason, I forgot the butter. I didn’t even cook with butter this time.

At 2:30pm is when I realized I never had a coffee, so I had a decafe with heavy cream. It’s the perfect way for me to finish off my meal.

At 6:00pm: I sliced more beef rump roast and I cooked it in a pan. Rare. Like really rare. lol  I also added a bit of ground beef to that and I ate that like dog chewing meat between my paws. Sorry for putting that image in your mind, but that’s how it felt. And it felt so right! Again, no butter. Just forgot about it.

At some point after I went to bed, like after midnight, I got up and had a gulp of light cream and chased that down with a gulp of heavy cream. Went back to bed completely satisfied. I swear, I’m going to start using a shot glass for this because that’s how very special it is to me.

Food that entered my mouth yesterday:  beef (ground, rump roast), bacon, deli ham, cream (heavy and light), coffee (decafe), water.

You can watch THIS VIDEO to learn why I’m doing this.

This is the article that I stumbled upon by Kelly Hogan which got me immensely excited.   And this is Kelly’s blog.

PLEASE READ: Please remember that it’s MY CHOICE to eat the way I want. If you think this is unhealthy, know I’m not as concerned with physical health. I’m more concerned with my mental health. I’m on a mission to feel better mentally… without cravings!!! I’m willing to test this so you don’t have to! But what works for me might not work for you. I’m not doing this to lose weight. I’m doing this because I’m convinced that I’m overly sensitive to carbs and that I must stay away from them if there is any chance of me feeling better. I’m eating from the animal kingdom only, like the complete opposite of vegan. I know this upsets many, but I promise I won’t eat your pets. You are free to follow my progress/failures and you can even disagree with what I do. Just remember that I will get the last word because it’s my blog, my channel, my life! That’s the new me talking! (I think I’m growing balls! Let me look… yes, I see one starting to grow!)

Sunday Chat – Freezing Day, Birth of a PG Member Quilt, Shaw’s Deals via Video?

It’s Sunday!

Hello everyone!  This is a beautiful sunny day here in Sanford, ME.  And when I say beautiful, I don’t mean that! lol  But I do understand that many people enjoy the sunshine. I’ll just patiently wait until the sun goes down.

I did not upload a new video last night, but please check out my Christmas Rag Quilt Tutorial if you haven’t yet!  And I must show off this beautiful rag quilt that peanut gallery member, Nele, made.  It was her first!  So freaking proud of her! This is why I love making tutorials. It’s such a good feeling to know I was able to teach someone how to make something!!!

Today, I must do some food freezing for my mother. The last time I did it was 2 weeks ago, I think, and she still has lots to live off, but she needs a few more things, like pasta. So hopefully I’ll have a new See What I Froze Today video later. Not sure about a concoction.

As for Shaw’s deals, I’m toying with the idea of doing video deals instead of posting them on the blog. I know that sounds crazy, but blogs are getting old. And with so many using phones now, catching a deal on a quick 30 second video might be more convenient. We’ll see. I love to experiment, so I just might give that a go! I’m not earning squat with prints, so I might as well try to beef up my youtube earnings on my Simply Shaw’s channel.

I want to remind you about my other blogs:

Have a great Sunday!

Easy Homemade Peppermint Marshmallows Recipe

NOTE: I get messages asking me why I post these types of recipes while I’m following a zero carb animal kingdom only food plan.  My answer is because I’m following ZC, but I bet you’re not! Just because I eat a certain way does not mean I have to limit myself to sharing only meat recipes. I’m not the carb police! lol

Be sure you check out Darlene’s Concoctions!!!

Easy Homemade Peppermint Marshmallows Recipe

INGREDIENTS:

1/3 cup powdered sugar
2 1/2 tablespoons unflavored gelatin
1/2 cup cold water
1 1/2 cups granulated sugar
1 cup corn syrup
1/4 teaspoon salt
1/2 cup water
1 teaspoon pure peppermint extract
8 to 10 drops red food color

Darlene’s Tip:  A tin filled with these marshmallows makes a very nice gift!

DIRECTIONS:

Step 1:  Generously grease bottom and sides of 11×7-inch (2-quart) glass baking dish with butter; dust with 1 tablespoon of the powdered sugar. In bowl of stand mixer, sprinkle gelatin over 1/2 cup cold water to soften; set aside.

Step 2:  In 2-quart saucepan, heat granulated sugar, corn syrup, salt and 1/2 cup water over low heat, stirring constantly, until sugar is dissolved. Heat to boiling; cook without stirring about 30 minutes to 240°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a ball that holds its shape but is pliable; remove from heat.

Step 3:  Slowly pour syrup into softened gelatin while beating on low speed. Increase speed to high; beat 8 to 10 minutes or until mixture is white and has almost tripled in volume. Add peppermint extract; beat on high speed 1 minute. Pour into baking dish, patting lightly with wet hands. Drop food color randomly onto top of marshmallow mixture. Pull table knife through food color to create swirl pattern over top. Let stand uncovered at least 8 hours or overnight.

Step 4:  Dust cutting board with about 1 tablespoon powdered sugar. Place remaining powdered sugar in small bowl. To remove marshmallow mixture, loosen sides from dish and gently lift in one piece onto cutting board. Using sharp knife greased with butter, cut into 1-inch squares (11 rows by 7 rows). Dust bottom and sides of each marshmallow by dipping into bowl of powdered sugar. Store in airtight container at room temperature up to 3 weeks.

What I Ate Yesterday – Day 16

Yesterday – Friday 12/2 – Day 16

When I got up, I had my usual coffee with heavy cream.

At 4:00pm: I whipped up a fresh new meat mix consisting of ground beef, bacon and rump roast, cooked in butter.

At 4:30pm: I had a decafe with heavy cream. That was like a delish dessert!

At 8:30pm: I ate more of the same meat mix that I made for lunch. I know many of you want to know how much, but there is no measuring with this woe. You eat until you are absolutely full. I’ll try to start taking pics of my meals again.

Before bed (like after midnight), I picked on some deli roast beef and ham and had a swig of light cream. Then I went to bed and decided I was hungry, so I got up and had a meal. I had more of the meat mix from above. And another gulp of light cream.

Food that entered my mouth yesterday:  beef (ground, rump roast), bacon, deli ham, deli roast beef, butter, cream (heavy and light), coffee (reg and decafe), water.

Saturday Chat – Random Facts plus Other Plans

Happy Saturday!

I got to sleep a bit late today. Felt good.  I needed it.

Last night I uploaded a Random Facts video. In that video, I asked if you use a peeler or paring knife to peel potatoes. I was shocked at how many said a knife!  I thought only my mother did that!

Not sure what I have up my sleeve for today.  I know I need to do dishes. I was doing so good at keeping up with that, but then I gave up. Just going through too much. Hopefully today I’ll get that done. And a load of laundry would be nice too.

As a reminder, Youtube stats are still not updated for the month of November. As soon as they are, I will do my monthly earnings update.  I know I have a few die hard fans who follow that series. We just have to wait a bit.

Have a great Saturday!

Easy Holiday Swirl Bars Recipe Made with Cookie Dough

I use affiliate links in some of my posts. I may earn a commission if you use my links. Full disclosure.

NOTE: I get messages asking me why I post these types of recipes while I’m following a zero carb animal kingdom only food plan.  My answer is because I’m following ZC, but I bet you’re not! Just because I eat a certain way does not mean I have to limit myself to sharing only meat recipes. I’m not the carb police! lol

Holiday Swirl Bars Recipe

INGREDIENTS:

1 roll (16.5 oz) Pillsbury refrigerated sugar cookies
1 cup semisweet chocolate chips
1/2 teaspoon peppermint extract
1/4 cup red candy melts or coating wafers
1/4 cup white candy melts or coating wafers

Darlene’s Tip:  You do not have to use Pillsbury brand cookie dough. And I’m thinking you could use chocolate chip cookie dough instead.  Also, you might want to add some green sugar sprinkles on top of the chocolate to make them look more Christmasy!

DIRECTIONS:

Step 1:  Heat oven to 350°F. Line 9-inch square pan with foil, leaving enough to hang over edges of pan. Spray bottom and sides of foil with cooking spray. Press cookie dough evenly in bottom of pan. Bake 28 to 30 minutes or until edges and center are set and light golden brown. Cool 5 minutes.

Step 2:  Meanwhile, in small microwavable bowl, microwave chocolate chips uncovered on High 45 seconds; stir. Continue heating for 15-second intervals until mixture can be stirred smooth. Stir in peppermint extract. Spread on top of warm cookie base, spreading to within 1/4 inch of edges.

Step 3:  In two separate small microwavable bowls, microwave candy melts uncovered on Medium (50%) 1 minute; stir. Continue heating for 20-second intervals, until candy melts can be stirred smooth; transfer to 2 separate small resealable food-storage plastic bags. Cut small corner off each bag, and squeeze teaspoonfuls of alternating colors onto melted chocolate layer. Using knife or metal spatula, cut through melted chocolate and candy melts to create swirled marble design. Firmly tap pan on counter to create a smooth surface.

Step 4:  Allow bars to cool completely, about 2 hours or until chocolate topping is set. To serve, remove bars from pan, and cut into 4 rows by 4 rows.
