Yesterday – Thursday 12/29 – Day 43
I had my usual cup of coffee with hwc when I got up. I do this pretty much every single day.
At 2:00pm, I cooked some slices of beef and I warmed up some of my eggs and meat leftovers from the night before. I also added the rest of my rotisserie chicken. All warmed up in butter. So good! I ate everything in my plate.
At 2:30pm, I finished off my meal with a decafe with hwc.
At 6:00pm, I sliced up the rest of my beef and cooked it all. I also added some shrimp. I piled it on my plate and ate until satisfied. I ate all the shrimp but saved the leftover beef for later.
At 7:30pm, I poured a bit of heavy whipping cream and light cream in a glass and downed that sucker. Soooo good!!!
At 10:30pm, I ate the rest of my sliced beef, cold this time. I really have perfected the way I cook those slices. So incredibly good and tender! Now I have no more beef and I have a 2 foot banking of snow behind my car. I must start shoveling so I can get to the store! I need my beef!!!
Food that entered my mouth yesterday: sliced beef, chicken, shrimp, ground beef, bacon ends, hot sausage, eggs, butter, light cream, heavy whipping cream, coffee, salt, pepper, lots of water.
PLEASE READ: Please remember that it’s MY CHOICE to eat the way I want. If you think this is unhealthy, know I’m not as concerned with physical health. I’m more concerned with my mental health. I’m on a mission to feel better mentally… without cravings!!! I’m willing to test this so you don’t have to! But what works for me might not work for you. I’m not doing this to lose weight. I’m doing this because I’m convinced that I’m overly sensitive to carbs and that I must stay away from them if there is any chance of me feeling better. I’m eating from the animal kingdom only, like the complete opposite of vegan. I know this upsets many, but I promise I won’t eat your pets. You are free to follow my progress/failures and you can even disagree with what I do. Just remember that I will get the last word because it’s my blog, my channel, my life! That’s the new me talking! (I think I’m growing balls! Let me look… yes, I see one starting to grow!)

TGIF!
We got at least a foot of snow last night! I’ll be some busy with my shovel today. Once I can get out of the driveway, I’d like to bring you all for a ride along to let you see the snow. That might not be today. lol
Last night I uploaded my next to the last 5 More Random Facts video. There will be only one more video in this series then we’ll be moving on to another series!
I also recorded a new no-sew fleece project that I hope to upload tonight. Stay tuned!
That’s about it for now. I need coffee then I have tons of shoveling to do!

NOTE:I get messages asking me why I post these types of recipes while I’m following a zero carb animal kingdom only food plan. My answer is because I’m following ZC, but I bet you’re not! Just because I eat a certain way does not mean I have to limit myself to sharing only meat recipes. I’m not the carb police! lol
8 Old El Paso flour tortillas for burritos (8 inch)
1 lb lean (at least 80%) ground beef
1 can (10 oz) Old El Paso mild enchilada sauce
1 jar (16 oz) black bean or corn salsa
2 cups shredded Mexican four-cheese blend (8 oz)
Darlene’s Tip:You can buy any brand ingredients that you want. And if you don’t like black bean or corn salsa, just use your favorite salsa.
DIRECTIONS:
Step 1: Heat oven to 350°F. Spray 13×9-inch (3-quart) baking dish with cooking spray.
Step 2: Lghtly fold 8 Old El Paso flour tortillas for burritos (8 inch) in half and place folded-side-down in dish; set aside.
Step 3: In 10-inch nonstick skillet, cook 1 lb lean (at least 80%) ground beef with salt to taste over medium-high heat, stirring frequently, until no longer pink; drain. Transfer to large bowl. Add 1/4 cup from 1 can (10 oz) Old El Paso mild enchilada sauce, 1 jar (16 oz) black bean or corn salsa and 1 cup of the shredded Mexican four-cheese blend; stir to combine.
Step 4: Divide beef mixture evenly among tortillas; wrap tortillas around filling and place seam side down.
Step 5: Pour remaining Old El Paso mild enchilada sauce and remaining 1 cup shredded Mexican four-cheese blend. Spray sheet of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil, sprayed side down.
Step 6: Bake 40 to 45 minutes or until hot and bubbly.

NOTE:I still watch TV like in the olden days! I don’t watch DVDs. I don’t record stuff to watch later. I don’t watch online. I’m a dinosaur! If you are too, hang out with me to see what I’m watching!
Tonight, I’ll be watching my current favorite show, Project Runway: Junior! I just love to watch these kids create their fashions! I think the ages run from 14 to 17. They are so talented! It’s on at 9:00pm eastern, but I’ll be watching a movie on LMN with my mother (see below) so I’ll catch the Project Runway: Junior repeat at 11:00pm.
Project Runway: Junior – Thursday, 12/29/16 at 9:00pm eastern on Lifetime (repeats at 11:00pm)
This is the movie I’ll be watching with my mother. We are very fussy with these movies. Some are good. Some are so bad that we find them laughable. But always worth a shot! lol
Bad Twin – Thursday, 12/29/16 at 8:00pm eastern on LMN

I had my usual cup of coffee with hwc when I got up. I do this pretty much every single day.
At 2:30pm, I feasted on the loveliness you see above. I was in the mood for variety again, so I had my bacon ends, hot sausage, ground beef and sliced beef. I left 3 slices of beef on my plate which I put away for later.
At 7:30pm, I ate the 3 leftover slices of beef cold. So good! So tender!
At 11:00pm, I cooked some more slices of beef and devoured those. Always cooked in butter. I will never get sick of that.
At 12:15am, I got out of bed because I felt hungry. I took a swig of cream thinking that’s all I needed but I realized I was actually hungry (yes, even after all that beef I had just eaten) so I cooked 6 eggs in butter. I find that I don’t digest eggs that well so I heated up the rest of the bacon ends and ground beef that I had cooked earlier. I put it all on my plate (it was a huge pile of food) and ate until satisfied. I ate about half, so only about 3 eggs total and half of a big pile of meat. How’s that for measurements? lol Then I went back to bed fully satisfied.
At ???, I know at some point I had a decafe but I forgot to jot it down. I’m thinking it was maybe after my lunch.
Food that entered my mouth yesterday: sliced beef, ground beef, bacon ends, hot sausage, eggs, butter, light cream, heavy whipping cream, coffee, salt, pepper, lots of water.

Happy Thursday!
We have a beautiful gray day here in Sanford, Maine! But the weather is yucky. I hear driving is not good, but it’s very easy to force me to stay inside. At least there is not a ton of new snow. I hope it stays that way!
Last night I made a Curly Fringed Fleece Scarf for a new video tutorial! I had no clue how it would turn out, but I was quite happy with it. I also have the practice scarf on eBay now.
Not exactly sure what I have up my sleeve for later today. I might start another fleece project, but this one will take me a few days to complete so that video would not be ready today. I could do more Random Facts but it’s so hard to think things up! But I’m ending that series at 100 facts, and I’m almost to the end, so I should just get that finished.
